I’m Japanese so I never cook with chiles and I’m horrible with spice. I thought they were like jalapeño level of heat.
It was delicious but BARELY edible for me. It hurt so bad. I needed to eat ice cream between bites.
I’ve since added coconut milk to it and now I can eat it without pain… but whew. It was too much.
I omitted the red chili flakes and cayenne once I tasted it and realized it was a death level of spice. I even omitted the third Serrano (it also didn’t specify when to add it) AND took the seeds out of the first two Serranos even though the recipe says not to.

If anyone makes this using all 3 serranos, cayenne, and red chili… you’re a brave one! Or, you’re west African!
A Zagnut is my all time favorite candy bar, so I decided to try to try a coconut PB ice cream. In my opinion, it is fantastic.
Mix and freeze
300 g. 2% Fairlife Milk
30 g. Part skim Ricotta
15 g. Creamy Peanut butter
10 g. PB2
0.5 Tbsp erithrytol
14 g. Sugar free vanilla pudding mix
1 scoop CSE coconut cream
Spin on Lite Ice Cream
Mix in:
15 g. Toasted coconut
It’s about 500 calories for the whole thing, which is higher than many I make, but I will for sure be making it again.
Brownie Base:
•8oz semisweet chocolate chips
•1 1/4 cups salted butter
•3/4 cup cocoa powder, divided
•1 tbsp instant coffee powder
•2 cups granulated sugar
•1/2 cup brown sugar
•6 eggs
•1 tsp vanilla extract
•2 tsp salt
•1 cup all purpose flour
Peanut Butter Fudge:
•2 cups sugar
•2/3 cup whole milk or evaporated milk
•7oz marshmallow cream
•1 1/2 cups creamy peanut butter
•1 tsp vanilla extract
•1 tsp salt
Directions:
1.) Preheat the oven to 350°.
2.) Place the chocolate chips, butter, instant coffee powder, and 1/4 cup of the cocoa powder into a microwave safe bowl and microwave in 30 second increments until everything is melted and combined. Set to the side to allow to cool a little.
3.) While that’s cooling, mix together the sugars, eggs and vanilla until light and frothy (this makes the top crusty). Then slowly pour in the chocolate mixture until combined. Mix in the dry ingredients until just combined.
4.) Pour into a parchment lined 9x13 cake pan. Bake at 350° until a toothpick comes out clean when inserted in the middle (25-40 minutes).
5.) FOR THE FUDGE. Allow the brownies to cool completely while making the fudge. You’ll need a candy thermometer.
6.) FOR THE LOVE OF GOD DON’T TOUCH THIS AT ANY POINT. IT WILL BURN THE SH!T OUT OF YOU. In a saucepan, mix together the milk and sugar until it reaches soft ball (235°-240°F) over medium heat, careful not to burn.
7.) Turn heat to low and mix in the peanut butter and marshmallow cream until all the lumps are out. Then, remove from the heat and mix in the vanilla extract and salt. Immediately pour over top of the brownies and allow to set up for 1 hour minimum. If you don’t let it set up, it’ll burn you really bad so be careful.
I’m actually not allowed any nuts/seeds/legumes. This makes me very sad and I risk it every time 😭 pb is just too good.
Are there any alternatives I can have? No cookie butter tho cause I’m allergic to cinnamon.

Are these two peanut butters the same, but with different packaging?
i found this at a Target in California. Both are made by Smuckers. I heard a rumor they are made in the same factory.
big price difference here though.
I had previously discussed how Adams, Laura Scudder, and Smuckers were the same…
Bit of an experiment this one, definitely needs good quality whole peanut butter with no additives, and a good quality roll. Worked well, will do again.
So quick and easy and it tastes so good, plus it fills me up!
Base: 1 container of quick oats, 1 packet of dry milk. Store in a tupperware.
When making them, scoop 1/2 a cup mix into a bowl. Add 1 cup to 1 & 1/2 cups of water. I usually add extra because they get dry. If you want more oats, just adjust the water.
Microwave for 1 & 1/2 minutes or until water is absorbed and oats are soft. It may boil over so watch it.
Add sweetener of choice (mine is Splenda), a serving of peanut butter, and mix. I usually add my sliced banana last then mix that in. Sometimes I add cinnamon too!
