Been offered freelance work whilst on UC so need to know some things

I’ll try to keep this short. I recently lost my job so I am on Universal Credit and I have been getting the additional Jobseeker’s Allowance every two weeks. With my redundancy pay and selling my car (plus other things) I’ve been okay to get by for now and for probably another month.
I have just been offered some freelance work. It’ll be sporadic and my day rate is £150. I am entirely new to the world of freelance. Am I correct in thinking I don’t need to pay taxes if I don’t earn over £1000 from the odd freelance job?
Also, I know with any Jobseeker’s Allowance etc, you need to declare if you have found work. I assume that includes even if it’s a one off shift where I’ve got £150? If it’s one or two shifts a month then I am better off not taking the work.
I imagine the place who wants me will need my National Insurance number anyway so it isn’t something I want to lie about or get in trouble for.
I don’t want to sound like I am trying to cheat the system or scam the government out of benefits. I am just really trying to figure out if I am better off waiting for a full time position to crop up (I have a lot of interviews / have had a lot so hopefully soon) or bite the bullet and venture into freelance (I’m a writer and editorial researcher if that helps for any reason lol).
