Hiyashi Chuka (chilled ramen noodles) is a Japanese summer classic, but this one is "Kure-style" from Kure City, Hiroshima.

Unlike the standard version, it uses flat, chewy noodles that catch the sweet, sour, and slightly spicy soy-based soup perfectly. Topped with char siu pork, shrimp, cucumber, and a boiled egg.

It's refreshing, deeply flavorful, and perfect for warm weather!
