Gouda stuffed meatballs in a mushroom sauce, ricotta and spinach filled bell peppers, roasted carrots, and garlic cheese flat bread.
I always joked she had the position of rooster in our flock, yesterday the hot headed broody frizzles got into a mini fight and she ran over to gentle break them up, so funny!
Some of the stuff I’ve already chipped away at or just didn’t want to pull the extras out of the freezer. Here’s what I’ve made this week! Pesto zoodle lasagna, flourless German pancakes with a lime glaze, hard boiled eggs, single serve cheesecake, blueberry protein muffins, and almond flour pancakes. Was gonna make Larb tonight but will make that tomorrow, been trying to come up with cold meals since it’s gonna be hot this week and next.
Added a top tray, got the plants I , and put in some fishies! They were all still hiding but they’ll get brave, goldfish in the upper pot and minnows in the middle pot. Can’t wait to get seeds into the rockwool and see how everything does!
I’ve got 24 fish tanks totaling about 215 gallons and always wanted a hydroponic system that’ll use the waste water when I clean the aquariums, so finally set this up! I’m able to pump the dirty tank water thru the window into the rain barrel and then can fill up a watering can or water the blackberries if the barrel is getting too full. Just need to actually set up the hydroponic plants for the 3 pots now, got clay balls and rock wool coming Tuesday! I was able to upcycle and use what I already had around so only spent about $20 on the new fittings. I want to build an actual aquaponic pond by the end of the summer so this will be great practice for me to play around with.
Peanut Ginger Lettuce Wraps
One of my all time favorite meal preps!
Ingredients: 1 lb ground turkey, 1 cup cauliflower rice, 1/2 cup peanut butter, 1/2 cup peanut powder or protein powder, 1-2 Tbs minced garlic, 1/4 cup chopped ginger, 1 Tbs ginger paste, 1-2 Tbs coconut aminos, 1/2-2 tsp cayenne pepper, bit of salt & pepper, romaine lettuce
Cook turkey in pan, drain some of the excess liquid, add the rest of the ingredients, stir until everything is thoroughly mixed, serve in lettuce leaves.

Ingredients:
1 carton vegetable broth, 1 can coconut milk, 1-3 tsp Thai red curry paste, 1 tsp chilli oil (optional), 2 stalks lemon grass, 1 tsp lemon grass paste, 1/4 cup loose ginger, 1 tsp ginger paste, 4 garlic gloves quartered, 4 cups veggies, 1-2 cups protein, Bit of salt & pepper, 1 cup cilantro or Thai basil
Heat curry paste, chilli oil, lemon grass paste, and ginger paste. Add broth, coconut milk, lemon grass, ginger, and garlic. Bring to a simmer, add veggies, protein, and salt/pepper. Turn to low, cook for 5-15 minutes depending on how hard you want the veggies. Take off heat, add cilantro or basil to taste.
Lavender and Sage have been sharing the only available nest box since locking the hutch off so they can stay broody. Bay and Honey are already up and about and roosting at night, these girls are just extra stubborn 😂 Bonus Paprika
My over stuffed pizza tonight! Crust: 1 lb ground turkey, 2 cups almond flour, 2 tbs garlic herb seasoning Separate into 1/4 portions after mixing, flatten on parchment paper, expect shrinking, bake until cooked through. Add sauce cheese and topping and bake again till cheese is melted or freeze crust for future use.
Made some coconut veggie tofu soup with Thai red curry paste, not gonna post the recipe cause I’m not 100% happy with how it turned out, doesn’t have enough punch even tho I used half the bottle of curry paste but maybe my taste is still off from my cold last week. I’ll make it again next month and if it comes out proper I’ll post the recipe then!

Hey y’all! So excited to see the movie tomorrow! I really like to dress up to match the theme of what I’m seeing and I’m having a lot of trouble coming up with ideas. Only one I have right now is “retail employee” but I just don’t know if that matches the vibes. Anyone who’s seen it have any better ideas for an outfit theme? No spoilers please, thank you!
