
Summer Spring Rolls – Perfect for Hot Days! ☀️🥢
If you’re looking for something light, fresh, and easy to make this summer, these spring rolls are one of my favorite go-to meals. The best part is that everyone can customize them with their favorite fillings.
What I used:
Shrimp
Lettuce
Cucumber
Green onions
Carrots
Purple cabbage
Apple (for a little sweetness!)
Avocado
Soak the rice paper in warm water for a few seconds until soft, add your fillings, then roll everything up.
My favorite peanut dipping sauce:
1 tbsp peanut butter
1 tbsp soy sauce
A drizzle of honey
Juice of 1 lemon
1 garlic clove, minced
Fresh grated ginger
A pinch of salt
Whisk everything together until smooth. If it’s too thick, add a teaspoon of warm water until it reaches your preferred consistency.
