Dairy free treats (+my review)

Cheesecake bites: I’ve heard good things about the cheesecake bites, even the cashier was raving about them as I was checking out. Grabbed the chocolate since that seems more up my alley, but there are two other flavors; strawberry and vanilla/regular.
They were okay, maybe my standards/hopes were too high but they had a weirdly sour/salty profile. Not the worst though, but definitely not worth it for almost $10 IMO.

Sanders dark chocolate caramels: I got these on a whim since I love dark chocolate and I do miss having caramels. Wasnt expecting them to be too good since the caramel is made from coconut cream. I was pleasantly surprised and I think these are one of my favorite df treats!! They do have a bit of a coconut taste but to me it doesn’t overwhelm the flavor and it goes with it nicely. Of course I would love if they had a type without coconut but still good. They are very pricey though :(

Have you tried any of these? What did you think?

Chocolate Mousse Cake (completely dairy free!)

Made this for my bday and it might just be the best thing ive ever put into my mouth.

The original recipe is for a 4 layer cake (https://sallysbakingaddiction.com/dark-chocolate-mousse-cake/#tasty-recipes-72931 ), but I followed this recipe for just two layers.

https://sallysbakingaddiction.com/triple-chocolate-layer-cake/#tasty-recipes-68103

Substitutions used were baker’s chocolate bars (semi sweet), country crock df heavy cream, and some almond milk + vinegar for the buttermilk in the cake.

I highly recommend this recipe. Even my bf who eats full dairy said “you can’t even tell that it’s dairy free”

Cinnamon roll focaccia (df ofc)

Followed two different recipes by King Arthur Baking;

  1. No fuss focaccia for the base. https://www.kingarthurbaking.com/recipes/no-fuss-focaccia-recipe

  2. Cinnamon roll focaccia for the topping, glaze , and instructions on when to add the stuff. https://www.kingarthurbaking.com/recipes/big-and-bubbly-cinnamon-roll-focaccia-recipe

What I did: Made the no fuss focaccia base, but added 1 T sugar in the dough. Also, it says you need a mixer, but ive been making this recipe by hand in a bowl and it turns out just fine. Just mix it well. Let it rise until poofy.

Next I followed the ingredients for the topping on the second recipe while the dough rose.

Once the dough was ready, I sprayed it with olive oil, sprayed my finger tips and then dimpled the dough. I then sprinkled the mixture all over the dimpled dough, as evenly as I could. And I dimpled it again to push the topping into it. Drizzled more EVOO on top according to the second recipe instructions.

*I dont have Vietnamese cinnamon so i just used the standard one at most grocery stores.

Baked it according to the No Fuss instructions.

Removed from oven, let it sit for a minute, then transferred “carefully” to a wire rack. Then let it cool for about 10 minutes while I made the glaze and cleaned up a bit. I put a parchment lined baking sheet under the wire rack and poured the glaze over the focaccia.

Hope you enjoy if you make this!

*I used country crock butter for the topping. And oat milk for the glaze. You can use water for the glaze in a pinch.

Nutella Peanut is so good

The silky smooth texture, the sweet chocolate flavor, everything about it is so amazingly delicious. I can’t share a picture of the jar cause I’m ashamed with how much I’ve eaten already. I highly recommend it.

Dairy free mini trifles 💗

Layers from bottom to top: Banana instant pudding layer -> made with oat milk, using 2 cups milk instead of 3. still turned out really runny but i think that’s cause i used homemade oat-milk.

Banana cake

Blackberry mousse

Blackberries

Topped with vanilla bean whipped cream (country crock plant based cream)

Recipes will be in the comments :)

My allergy is kind of new, at least to where I haven’t had to take any medication these past couple years, yet I stupidly forgot to ask the pharmacist/my dr about potential allergens in the medicine. Now that im experiencing a rash and other symptoms, i’ve learned the drug contains lactose as a binder. Does anyone know of a different type? I will be contacting my dr office asap but i like to hear from others.

The smores ice cream sandwiches are really good but have a play-dough-like aftertaste 6/10

Yall, these back to nature crackers are SO GOOD. i wish they were a little more salty or had those salt flakes like cheese its. 8/10

Pistachio Ice cream by sprouts: It’s alright. I had never tried pistachio ice cream before. It’s just really bland. I do like the saltiness of the pistachio though. 4/10
