Pepper Jelly and Onion Jam
In my first two expeditions into canning I tried some pepper jelly, and maple balsamic onion jam. Going to give a jar of each to some colleagues who helped me apply to grad school. I was nervous at first about my technique (hence inconsistent head space) so I went overkill and pressure canned the pepper jelly. After that first run (and reading/seeing a million videos of people water bath canning onion jam) I felt a little most comfortable just going with the bath for the onions. Cant wait to start trying some more recipes!
How are recipes tested?
Preface that I’m a biochemist working in a commercial RnD lab. I actually work on a project where we are growing bacterial cultures, albeit not Clostridium botulinum (which causes botulism).
I was just wondering, mostly for just informational purposes, if there is a published SOP to test recipes. I’m not saying I’m going to start testing my own recipes (unless the literature is there to support), but I wanted to know what that process looks like, how much peer review goes into it, how many new recipes are getting “tested” as we speak, and by whom? If it is possible for me to do long term stability testing on new recipes that’s something I’d love to do, even if it means making a few batches of foods with zero intention of eating them, and only using them to rest for cultures.
They said it couldn’t be done
Big Cat Mutiny ad read immediately followed by two back to back unskippable YouTube Mutiny ads. At that point I just gotta tip my cap.
How you know when you've hit your creative limit.
I'm designing an encounter where the party is trying to break into an impound lot and steal back a cart that the city took from them. In the lot there are several other carts that the party might inspect while they're sneaking around. I made the map in Inkarnate so I'm kinda "married" to the number of carts that I have to populate. I had some pretty clear ideas for easter eggs to lay for a few of the carts, but after a while I hit a wall.
The carts are as follows:
- The racing cart of a local drift champion, who asked the party to try and get her cart too (essentially as a side quest)
- A cart that was taken from one of the crime families in town, with hints that the city is working to erase one family in favor of the other family that they are in bed with
- a cart of random treasure that is precariously stacked, giving a sleight of hand check not to topple and awake guards.
(here's about where I ran out of creative steam)
- A cart that's just full, floor to ceiling, with pickles (only notes I have are that the pickles are very tasty)
If normal Cheah is weed, today’s Cheah was Fentanyl.
Sticking to his guns during AI crabs was the most Cheah thing I’ve ever heard of. “All these crab experts coming out of the woodwork” THEYRE NOT CRAB EXPERTS STEVEN THEYRE JUST NOT AU-MINTZ-TIC. Then to hear his dad crabs all the time (which I’m pretty sure might be poaching) and he still thinks there’s a chance there are elaborate tunnel systems 8 INCHES UNDER THE BEACH! I don’t know how the other guys keep it together. THIS MAN IS THE FATHER TO TWO CHILDREN. TWO CHILD HUMANS ARE LEARNING ABOUT THE WORLD FROM STEVEN CHEAH. (I want to make it clear Steven is probably a great dad, just so strange) It truly takes a special brain to produce these thoughts, never change Steven.
Edit: mostly kinda confirmed NOT poaching on Gong Cheah for the crabs. I apologize for slandering his good name.
