Been dreaming of Stanley tucci eating this in Italy
So I made my own
Slice one zucchini thinly
Slice one jalapeño thinly
Fry in olive oil with salt and pepper. Fry it until deeply caramelized and soft
Put in a dish and refrigerate for several hours
Boil some spaghetti in heavily salted water
Drain pasta and Reserve pasta water
Add the cold veggies to a hot pan
Add spaghetti with some pasta water
Stir vigorously
Add some Parmesan
Enjoy!!

I was worried about this being overhydrated but the soda bread was so forgiving
My last batch was underhydrated and dry so went the other way this time
2c whole wheat flour
1c white flour
1c bran
1/4c wheat germ
1.5tsp baking powder
1.5tsp baking soda
0.5tsp diastatic malt
2tsp sugar
1tsp salt
1/2c yoghurt
2 tsp oil
1/2c-1c water
Like I said I over hydrated it a bit. The end result ended up being a very wet but still shapable dough
Baked it at 375 without convection for thirty mins then with convection for about 30 more mins
Crumb turned out great. Was soft and pretty flavorful!
A close up on some delicious spaghetti I made
