Garlic mustard is non-native to Vermont/North America and is aggressively invasive. It had s similar flavor profile to ramps which is sensitive to being harvested. Garlic mustard is an exceptionally nutritious, invasive leafy green, rich in vitamins A, C, E and minerals like calcium, iron and manganese. It boasts higher vitamin C than orange juice and more vitamin A than spinach, along with high fiber, omega-3 fatty acids, and beneficial phytochemicals.
