I thought at the very least lashley would be a challenger for the AEW championship (and not winning) but they haven't done much

I've never really been happy

I'm 39 and realizing that I've never been truly happy without an external force.

My cat makes me happy

My family makes me happy

Food makes me happy

But I've never actually just been happy without something external. Can anyone relate to this?

Puff pastry question

I'm trying to do a live mille feuille station at an event. I haven't dealt with puff pastry a ton so just curious if there's some feedback on how to keep it crisp?

I wanted to have pre baked discs brought to the event and then build it fresh on site. If I bake and then wrap the puff discs in parchment , will they still be crisp 10 hours later if I keep it in Tupperware?

How do you deal with complements?

I...like many chefs...have my own mental struggles. Mentally I always wonder when people will "find out" what a fraud I am. The sales are there, the complements are in front of my face. People love the desserts I make....and still I mentally struggle to absorb complements.

The other day I was delivering my goods to a retailer of ours and I had my son with me. The girl working said to my son "are you working hard to be as gifted as Daddy is?" It's almost like it's in my ear and impossible to believe.

Do any of you struggle with a chef imposter syndrome of sorts?

Trt in Canada. So many options now...

Hey guys.

Researching trt. Last time I checked was 4 years ago and then 5 years ago and it was quite low. I'm turning 40 so Im thinking more and more about it.

In the Toronto area there are so many options, Gameday, up guys, science and humans, sovereign male, village rehab.

Is there a clear winner here?

The stupid finish needs to stop

I'm absolutely exhausted of the submission finish where the person passes out instead of giving up. I get that it's to keep the loser strong but when you do it twenty times a year it just sucks.

Cannoli cream that has been thawed from frozen.

Hi guys

I made Cannoli cream, then frozen it and thawed it a couple days later for an event. I didn't end up using it and now it's in my fridge. I know it's usually 3-4 days for most dairy items but the ricotta I use is dated for July 1st. How long is this actually good for?

When does it actually expire?
