I never knew they were so good. I'll be making them all the time now.

Are there any tips or tricks to getting them to puff up higher?

I made a half batch:

1-1/4 cups flour

1-1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/4 cup unsalted butter, cubed and frozen

1/2 cup buttermilk

1/2 tsp honey

2 tbs cornstarch for dusting the board.

Sift dries. Cut in butter. Fold in buttermilk and honey. Roll, fold, repeat, dusting lightly with cornstarch. Cut and place in hot buttered cast iron. Brush with buttermilk. Bake at 425° for 15 minutes. Brush with melted butter and serve.

I transplanted single flower from my back woods years ago. They have spread nicely, and today I noticed one of them has grown this beautiful variegation.
