Open fantasy RPG / life sim / survival sim where I can slowly learn magic to make life / traveling / survival easier

I'm looking for a game where I roleplay as a regular person in a populated fantasy world who has to get by like everyone else, and can slowly learn magic that can make life easier. As an example:

Recently I had a survival Skyrim playthrough as a mage ("witch") with a mod that makes learning new spells take time. Because sleeping and studying combined were like 14 hours a day, there was limited time per day to secure means of survival / work / travel / adventure / get by. I also used some mods to add spells for utility outside of combat, which slowly and gradually made life easier and gave me the fantasy of being a cool witch developing life hacks. As a result, there was an incentive loop of saving up enough money to buy new useful spell tomes, to then make life easier, earn more money, rinse and repeat. Of course I also studied spells for combat, primarily focusing on stealth, illusions, and sniping with ice. Eventually I also did the College of Winterhold questline and climbed up the ranks to archmage, and I enjoyed the vibe of being a magic expert. At the same time, I wish I had stayed with the fantasy of just being a student there much longer.

I love the fantasy of getting by in the world, at first having to deal with everything (survival, travel, making a living etc) like any other peasant, but slowly over time making things easier via studying magic, and I'm craving more.

Would appreciate recommendations taking into account that fantasy vibe. I prefer games where you're not mostly alone in the world (like Minecraft), instead you're just one person in a populated area, starting off as a normie among normies, but at this point I'll take what I can get. Thanks in advance
