Kottu with black pork curry

Sri Lankan street food? dish.

Egg and prawn kottu

Kottu is made almost the same way you'd do fried rice, substituting kottu roti (chopped up parota) in place of rice.

*Ingredients (rough measurements)*

Kottu roti 1kg

Eggs 5

King prawn cooked and chopped to thirds 400g

Spring onion 8 stalks

Carrot 5 medium

Shallots 5

Bird's eye chilli 1

Oyster sauce

Soy sauce

Garlic

Ginger

Salt

Pepper

MSG

**Black pork curry**

*Ingredients (rough measurements)*

Pork belly and shoulder cut into about 1" pieces 1kg

Roasted Sri Lankan curry powder 1.5 tbsp

Lime juice 1tbsp

Salt

Black pepper powder 3tbsp

Coat the pork in the ingredients and let it rest at least half hour. Overnight in the fridge if possible.

Red onion 1

Garlic

Ginger

Curry leaves handful

Cloves 3

Cardamom 4

Cinnamon sticks 0.5

Heat up about half a tablespoon of oil and add the above list of aromatics. Sauté and add the marinated pork.

Let it cook and you'll see water from the meat come out as it cooks.

Bird's eye chillies 2

Tamarind 1tsp

Once the water cooks off, add water to the pot along with tamarind. Close the lid and let it cook till meat is tender.

Granulated sugar 2tsp

At the last stage of cooking add some sugar. Taste test and adjust spice level and sugar as needed.
