Slice zucchini in 0,5 cm dices. Cut bell peppers into thin strips and onions into thin half rings. , mix per ~ 500-600 g vegetables with 1 tbs evoo and 1 tbs red or white wine vinegar, black pepper, salt and spices of your choice. Preheat airfryer to 180 degrees. Roast vegetables for 16 minutes, shaking halfway through.

Unfortunately a lot of the Mediterranean food is too expensive for me in the Netherlands. For example fish, EVOO, avocado, berries and kalamata olives are really expensive here. Are there any low budget options (at least cheaper here in The Netherlands) that fit in the Mediterranean diet? Any suggestions would be appreciated 🙏🙏

For dinner I made marinated airfryer chicken served with whole wheat pasta, veggies in tomato sauce, olives and feta cheese. I didn’t have enough chicken so I have one spare portion of the pasta pot to which I added a can of tuna, which will be lunch tomorrow.
I still had some veggies left over so I cooked those separately, mixed some eggs with cottage cheese and low fat gouda cheese in the blender and made a random “egg scramble” which I will probably serve with bread rolls for breakfast.
Yes I know I am horrible with cooking haha 😝

Hey there. I am really a bread eater, I eat it for lunch and breakfast almost every day. However, It’s hard for me to think of mealprep friendly sandwich filling variations, I always did boiled eggs, ham slices, gouda cheese or peanut butter. Are there any other sandwich combinations that are mealprep friendly and I can take with me to work for breakfast and lunch? Any suggestions are welcome and would help me out 🙏🙏
I currently have those flexible silicone cutting boards. But they are at their end of life and need to be replaced. What cutting board material do you use or recommend? I don’t want to use any type of wood because that’s not dishwasher safe, difficult and expensive maintaince and colourful things as marinade and seasoning penetrates into the wood.
Are there any other options for good quality cutting boards? I would appreciate any suggestions.
Overnight oats with quark, homegrown walnuts and plums for breakfast.
Dinner: Homegrown green beans with ground chicken, satay sauce from PB and soy sauce, and basmati rice.
For lunch I just make 2 soft bread rolls with ham/cheese/eggs and some mixed salad, keep it simple with this heat.
Cardiovascular diseases are an issue in our family, so I want to get rid of some unhealthy eating habits that I grew up with. My dad had to go to the hospital for a check on hypertrophic cardiomyopathy as a consequence of his life style.
I am already 30 years old so I was wondering if picking up this diet would still bring up health benefits for the rest of my life. Or am I too late to start with this diet to work on my physical health?

Wie heeft zich wel eens laten verleiden door supermarkt aanbiedingen. Ik zelf namelijk veel te vaak moet ik bekennen waardoor ik uiteindelijk duurder uitkom dan met een standaard boodschappen lijstje. Er komen nog altijd veel aanbiedingen in de supermarkt voorbij waarvan ik twijfel of het “bedrog” is nadat de prijzen eerst steeds iets extra omhoog gaan dan wat overeenkomt met de inflatie of dat de inhoud bijvoorbeeld minder is geworden.
Maar ik vraag me af of supermarkt aanbiedingen nou echt “bedrog” zijn of serieus kunnen helpen met geld besparen als je de aanbiedingen verkiest boven wat je lekker vindt of wat je van plan was om in eerste instantie te kopen?
For the variety, I like to have a few times a week for breakfast non fat quark (kind of high protein yogurt, very popular in the Netherlands) with homegrown walnuts, broken flaxseed, (frozen) fruit and sweetner (I don’t know if it’s better to use sucralose or honey?).
But what type of carbohydrates do you suggest to make this a complete breakfast? I like to mix everything in the day before so it’s ready to take with me to work for breakfast the next day. Preferably something that remains a bit crunchy if possible already mixed in the quark.

Hey there. I have heard a lot of health benefits (physical and mental) from a Mediterranean diet. So I decided to give it a try. However, I am totally unfamiliar with Mediterranean foods so I need some help with making a groceries list of Mediterranean key ingredients that are recommended to always have in my house.
Does anyone have any recommendations for Mediterranean key ingredients (preferably cheap and versatile) and simple recipes for Mediterranean breakfasts, lunch and dinner (not sure if snacks allowed?)

Ik ben benieuwd of meer mensen dit herkennen.
Vaak gaat mijn werkdag in het begin prima, maar in de laatste twee uur krijg ik een soort crash of inkakker. Ik word lusteloos, mijn concentratie neemt af en ik merk dat mijn productiviteit flink daalt. Het voelt alsof mijn batterij ineens leeg is, ook al heb ik veel plezier in mijn werk en wil mijn hoofd wel gewoon doorgaan.

How many fats do you aim for and use per individual prepped meal? And where does this fat amount come from?
I have my freezer and fridge filled with a lot of homegrown vegetables and I have different protein and carb options. But I have no clue what to make with them.

I have the following ingredients:
Chicken breast
Canned tuna
Black olives
Sundried tomatoes
Frozen green beans
Broccoli in the fridge
Red onions
Zucchini’s
Eggs
Gouda cheese and feta cheese.
Furthermore I have plenty of uncooked carbs, spices, seasonings and condiments so that should be good.
Ik heb vaak met vrije dagen en vakanties dat ik “altijd iets te doen moet hebben” omdat ik anders juist meer stress ervaar dan op een drukke werkdag. Nu heb ik ook een weekend routine voor mezelf waarbij ik genoeg te doen heb, maar in vakantie periodes mis ik deze routine wel al na 1-2 dagen niet werken. Ik ga ook nooit ergens heen op vakantie omdat ik slecht aan nieuwe omgevingen kan wennen dus ik weet even niet wat ik kan doen in mijn vakantie periodes om echt “tot rust te komen” maar nog wel een beetje bezig kan zijn.
