MONO DI POLY SACCHARDIES

I do not know if this is the right sub to ask for book advice, I'll give it a shot and if not. please refer me to a better place to ask if you know one. Im looking for a book covering sugar/carb/fiber absorbtion/metabolism. About mono, di, polysacchardies. How human-indigestable fibers are long chains of carbs etc.
