Help with sake for making Mentsuyu at home

I'm planning on making a basic Ramen sauce with this recipe I got:

200 ml (7 fl oz) soy sauce
100 ml (3½ fl oz) sake
100 ml (3½ fl oz) water
200 ml (7 fl oz) mirin
10 g (¼ oz) dried kombu
10 g (¼ oz) katsuobushi (dried bonito flakes)

My question is: what kind of sake should I use? Will the type of sake matter much?
I live in Stockholm, Sweden, and the sake supply is limited. My local shop has these brands & products available:

Akita Fuji Nigori
Nanbu Bijin Tokubetsu Junmai
Nanbu Bijin Junmai Ginsu
Geikkeikan Junmai Sake
Mikadomatsu Junmai-Ginjo

It's also possible to order less common ones but it's a slight hassle.

Singapore Airlines & Rimowa repair service at its finest

Couple of weeks ago I flew to Singapore from Copenhagen. At Changi I noticed the wheel on my twelve year old Classic had partially come off due to rough baggage handling. I went to the Singapore Airlines Lost & Found desk and filled out a form. They were super friendly and accommodating. This was about 7 AM.

I checked in early at my hotel, and before 10 AM a rep from Singapore Airlines Baggage Repair Service messaged me on WhatsApp to pick up by bag at my hotel. About 25 hours later, at 11 AM my repaired bag was delivered to my hotel room with a brand new wheel attached.

I love it when customer services are fast, seamless and doesn't suck the life out of you. In this case, things worked like a dream, and I hope things go equally well the next time my bag gets banged up.

I paid nothing.

Non-QSuite 787 business class STO-DOH any good?

QR noob here. I am planning a leisure trip to Kuala Lumpur from Stockholm this Autumn and looking at three different options. The three different options in business class are SQ (2 stops via CPH/SIN; not ideal), EK (via DXB) and QR (via DOH obviously). Since I will be traveling with 2 other persons, I have to weigh in price and total travel time but also total experience as this is a birthday trip for my two friends. I'm a regular customer of SQ business so I have very positive experiences from them - this is my benchmark. I've flown Emirates business on their A380 (1-2-1 config) but this was some years ago before the most recent cabin refit. I've never flown Qatar but would very much like to try QSuite. The thing that stops me from trying though is the fact that one leg, STO-DOH, is on the 787 with the older cabin (all flights, regardless of weekday). I've seen some reviews on YouTube and it looks quite outdated. The soft product seems good though, but so is SQ. So the question to all experienced QR business class travelers is will I enjoy the non-QSuite business class and is the QSuite experience on the next leg (DOH-KUL) "worth waiting for"?
