TLDR what do when people only run stat checks?

I play mostly against 2 friends. 1 plays custodes/thousand sons and the other plays tyranids. They only ever play stat check style monster mash style lists. For example into thousand sons last night they had 2 vortex beasts, defiler, a Damon prince, helldrake and some terminators plus some scoring pieces. Every game has the same pattern and it feels like it always comes down to the way I build my lists. Either I run a varied or what I’d consider a balanced list and my 2-3 antivehicle/ monster pieces get 1-2 rounds of shooting and if they don’t kill enough I just loose. Or I build a stat check style list 2, if I match them it’s usually a close game, otherwise it’s close or I loose by a huge margin. 11th has made things even more obnoxious because they just play purge the foe. I don’t like building stat check style lists though and I feel kinda mean when I run them. Is this like a touch grass sort of situation where I just need to play against some other people? I could also talk to my friends I just feel bad telling other people how they should play the game.

I want to make my own hellbrute possibly with a rescale. Anyone else done this? Any other kits a good starting place?
