This was my breakfast today. Eggs cooked in a poached egg pan on top of ripe avacado on top of whole grain toast and the bread was baked with avacado and guacamole seasonings . A sprinkle of Tajin seasoning tied everything together
Today for breakfast I made a Kaisersmarrn (Emperor’s Mess). Typically an Austrian dessert but I like for breakfast. It is an eggy pancake with raisin soaked in rum added to the batter. It is cooked in a skillet until done then chopped up in the skillet with added butter and sugar and cooked longer until it’s glazed with the sugar. Since I’m a New Englander I use maple sugar for the glaze.

It’s interesting that the melody of this song was used earlier for a US Union Army song during the American Civil War. “Marching through Georgia” was about General Sherman’s march to the sea

It was slightly dry but not crumbly, and IMO tasted like a cheddar with a hint of nuttiness
