I found the perfect space that's exactly the width of one block character in signs

Just copy paste this: 

 

It fits between two blocks characters just like a block

Specifically, it's "U+2001 M QUAD" and a normal space

[Java] Did they remove colored text from signs in Java?

I tried using a custom command to give myself a custom sign: 

/give @a oak_sign[block_entity_data={id:sign,front_text:{messages:[[{"text":"███████","color":"#ff0000"}],[{"text":"████████","color":"#ff0000"}],[{"text":"████████","color":"#ff0000"}],[{"text":"██████","color":"#ff0000"}]]}}]

But when I placed it, it didn't work
