I just watched the new Avatar Movie, and there it is said that in Sonam's time is when the Earth Kingdom is made and waged war. And we know that Sonam was not able to stop this because she died fighting Tagah and before she died she ordered the Air nation to move to the mountains.
And since she wasn't able to stop, it's up to the next Avatar to stop it like Aang but he will need to grow and get stronger first.
In the meanwhile the Earth kingdom is just spreading their land and getting bigger.
And you're probably thinking that the fire nation had more time to take over so why are they still smaller.
And with that my I offer you, Earthbending, when you look at the map you see that 90 %of Earth kingdom is very close with each other connected by land, so they wouldn't have any problems conquering these places because you know, it's in land. While Fire nation have to use ships to go to places since their mainland is across seas.
So basically, Earth kingdom is big because the land is connected.
