For the rabbit:

  • 2 rabbit loins
  • salt and pepper
  • 200 g (7 oz) bacon
  • oil
  • 4–5 juniper berries
  • 1 sprig of rosemary
  • 3 garlic cloves

For the citrus eggplant ragout:

  • 1 eggplant
  • 1 onion
  • olive oil
  • 2 garlic cloves
  • 1 salted, preserved lemon
  • fresh mint leaves

Instructions

Fillet the Instructionsrabbit loin from the bone, season the pieces with salt and pepper, and wrap them in bacon. Fry them in hot oil with rosemary, juniper berries, and garlic until crispy. For the eggplant ragout, sauté the diced onion in olive oil, add the cubed eggplant and garlic, season with salt and pepper, and cook until done. Finish with preserved lemon and its peel and fresh mint. Serve with mixed salad greens.

Plum Pie with Vanilla Custard and Almond Streusel

There's an old Transylvanian joke about harvesting autumn fruit:

A father and son are up in the plum tree.

"What are we making from these plums, dad?" the boy asks.

"Well, son," the father replies, "if your mother gets well, we'll make plum jam. If she doesn't... we'll make plum brandy!"

Luckily, nobody was sick!

Ingredients

For the Pastry:

  • 150 g (5.3 oz / 2/3 cup) cold butter
  • 100 g (3.5 oz / 1/2 cup) granulated sugar
  • 1 large egg
  • 300 g (10.6 oz / 2 ½ cups) all-purpose flour
  • Pinch of salt
  • 1 tsp vanilla extract
  • Zest of 1 lemon

For the Plum Layer:

  • 700 g (24.7 oz / approx. 5 cups) fresh plums, pitted and halved/quartered
  • 50 g (1.8 oz / 1/4 cup) granulated sugar
  • 2 tbsp breadcrumbs (to absorb excess moisture)

For the Vanilla Custard:

  • 2 large eggs
  • 100 g (3.5 oz / 1/2 cup) granulated sugar
  • 60 g (approx. 1.5 packets) vanilla pudding powder (or cornstarch + vanilla)
  • 400 ml (13.5 fl oz / 1 ⅔ cups) milk
  • 1 tsp vanilla extract
  • 50 g (1.8 oz / 3.5 tbsp) butter

For the Topping:

  • 5 tbsp flaked almonds

Instructions

Knead all the pastry ingredients into a smooth dough. Divide it into roughly 2/3 and 1/3, wrap both portions in plastic wrap, and freeze for 15–20 minutes. Whisk the pudding powder, sugar, eggs, and vanilla until smooth. Gradually whisk in the milk and cook over medium heat, stirring constantly, until thickened. Remove from the heat and stir in the butter.Pit and slice the plums, toss them with 50 g sugar, and let them sit for a few minutes. Drain off any excess juice.Line a 9 × 13-inch (20 × 30 cm) baking pan with parchment paper. Coarsely grate the larger piece of dough evenly over the bottom. Arrange the plums on top, sprinkle with breadcrumbs, then spread the warm custard over the plums. Grate the remaining dough over the custard and sprinkle with the flaked almonds. Bake at 180°C (350°F) for 35–40 minutes, until golden brown and set. Cool completely before slicing so the custard has time to firm up.

A szedercurdhöz:

  • 350 g friss szeder
  • 100 g cukor
  • 1 tk reszelt citromhéj
  • 2 ek friss citromlé
  • 2 ek víz
  • 2 tojássárgája
  • 2 ek étkezési keményítő
  • Egy csipet só
  • 1 ek hideg vaj (felkockázva)

A vaníliás mascarponéhoz:

  • 250 g mascarpone

[Homemade] Blackberry Parfaits with Blackberry Curd

Autumn is here and now that school has started, there barely seems to be enough time for anything! Blackberry is easily one of my favorite ingredients, and this time I decided to transform them into a silky blackberry curd.

INGREDIENTS

Blackberry Curd:

  • 350 g (12.3 oz / approx. 3 cups) fresh blackberries
  • 100 g (3.5 oz / ½ cup) granulated sugar
  • 1 tsp lemon zest
  • 2 tbsp fresh lemon juice
  • 2 tbsp water
  • 2 egg yolks
  • 2 tbsp cornstarch
  • A pinch of salt
  • 1 tbsp cold butter, diced

Mascarpone Layer:

  • 250 g (8.8 oz / approx. 1 cup) mascarpone cheese
  • 100 ml (3.4 fl oz / 7 tbsp) heavy cream
  • 3 tbsp vanilla sugar (or 3 tbsp powdered sugar + 1 tsp vanilla extract)

Assembly:

  • 8 ladyfingers (savoiardi)
  • 100 g (3.5 oz / approx. ¾ cup) fresh blackberries for layering & garnish

INSTRUCTIONS

To make the curd, simmer the blackberries, lemon juice, zest, sugar, and water in a saucepan for 10 minutes, then press the mixture through a fine sieve to strain out the seeds. Whisk the warm fruit puree with the egg yolks and cornstarch, then return to medium heat and stir continuously for 1–2 minutes until thickened. Off the heat, stir in the cold butter and salt until glossy, then let it cool completely. Next, whip the mascarpone, heavy cream, and vanilla sugar in a bowl until light and fluffy. Finally, assemble the glasses by layering broken ladyfingers, vanilla cream, blackberry curd, and fresh berries—repeating the layers once more and topping each glass with half a ladyfinger to serve chilled.

Traditional Transylvanian Zacusca – A family recipe for winter preserving

Across the Balkans and Southeastern Europe, every region—and every single family—has its own cherished winter spread, ranging from Ajvar and Kyopolou to sweet pepper pastes and vegetable jams.

Somewhere right in the middle of this delicious spectrum sits Zacusca: a rich, slow-cooked (Transylvanian) vegetable spread.

In our family, we’ve been making this exact bean and carrot version (without eggplant) for over 40 years. It’s our home-cooked comfort food and an absolute lifesaver for university students taking jars back to their dorms.

My husband once rewrote my mom's recipe in his own style, and every year I laugh when I read it. It starts with: “Take a deep breath and prepare yourself mentally for the next 12-24 hours.” (Which, to be fair, includes market shopping and prep work.)

It takes patience, continuous stirring, and a bit of elbow grease, but having 10-12 jars of this in the cellar makes it all worth it.

INGREDIENTS (Makes ~10 jars / 370 ml each)

700–800 ml (3–3.4 cups / 24–27 fl oz) sunflower oil

250 g (1/2 lb / 8.8 oz) onions

2 kg (4.4 lbs) gogoșari (Capsicum annuum — if unavailable, use thick-walled red bell peppers or Kapia peppers)

1 L (4.2 cups / 33.8 fl oz) tomato juice

1 L (approx. 800 g / 1.7 lb) cooked beans

1 kg (2.2 lbs) carrots

1 tbsp sugar

1 tsp food-grade preservative (optional)

Salt, whole peppercorns, bay leaves to taste

(Note: Quantities refer to vegetables after cleaning.)

Instructions

Grind all cleaned raw vegetables (peppers, carrots, onions) and cooked beans through a meat grinder into separate bowls. To start cooking, heat a portion of the oil in a large stockpot. Sauté the ground onions until translucent, then add the peppers and cook them down while stirring constantly—adding a splash of extra oil if needed to prevent sticking.

Next, stir in the ground carrots, another portion of oil, salt, peppercorns, and bay leaves. Let everything simmer on medium-low heat until the carrots are fully softened.

Once the base is soft, add the ground beans and tomato juice. Simmer gently and keep stirring continuously to avoid burning, cooking until the mixture thickens and small droplets of oil float to the surface. Stir in the sugar right at the end.

Finally, ladle the piping-hot zacusca into clean, sterilized jars, leaving a little room at the top. Pour 4–5 tablespoons of very hot oil over each jar to create an airtight physical seal without needing chemical preservatives. Seal the lids tightly and wrap the hot jars in thick blankets to cool down slowly over 24 to 48 hours before moving them to storage.

Our family recipe ends like this: “We breathe a sigh of relief, but not too deeply—because we still have to wash up and clean the kitchen. We put away the giant pots for another year and try to forget the whole ordeal.” We usually make a triple batch.

There are endless variations of what people call the "authentic" or "original" Zacusca. Depending on the region or family, you'll find versions loaded with roasted eggplant (vinete), wild mushrooms like parasol mushrooms, or sweet corn.

Also, a quick heads-up on the oil: we use a bit more hot oil purely for physical preservation (to create that airtight seal without chemicals). If you prefer a lighter version or plan to eat it fresh, feel free to reduce the oil to your liking!

I’d like to know: How do you preserve your autumn harvest, or what’s your favorite version of a vegetable spread? Drop your ideas and family tricks in the comments!

Traditional Transylvanian Walnut and Meringue Sacks (Hamuzsák) – A Tender Pastry from Rimetea

While Dracula might be the legend that put Transylvania on the global map, for me, the region’s real magic lies in its deep culinary heritage and peaceful villages.

This traditional pastry comes from Rimetea (Torockó), a historic village nestled in Transylvania. Its local Hungarian name, “hamuzsák”, literally translates to “ash sacks” (also known as Cenușărese in Romanian). Despite the dramatic name, these little baked pouches are light as air: a crisp, tender dough wrapped around a feather-light walnut meringue filling.

(Note: My recipe for these walnut sacks is heavily inspired by and based on the traditional culinary heritage documented in Pál Kövi’s famous book, "Transylvanian Feast".)

Ingredients
For the dough:

  • 250 g (8.8 oz) butter
  • 250 g (8.8 oz) flour
  • 6 egg yolks
  • A pinch of salt

For the filling:

  • 6 egg whites
  • 250 g (8.8 oz) sugar
  • 250 g (8.8 oz) ground walnuts

For serving:

  • Vanilla powdered sugar

Instructions

Knead the butter, flour, salt, and egg yolks together into a smooth dough. Divide into 4 equal logs, cut each log into 12 pieces (yielding 48 small dough balls), and chill in the fridge for a few hours. Beat the egg whites until semi-stiff, then gradually whisk in the sugar until firm and glossy. Gently fold in the ground walnuts with a spatula. Roll out each dough ball paper-thin. Place a tablespoon of meringue filling in the center and fold all four sides over to form a small pouch. Bake on a lined baking sheet at 180°C (350°F) for ~15 minutes until light gold. Dust with vanilla powdered sugar once baked.

Kulajda – Rich Czech Mushroom and Potato Soup with Poached Egg

I think the Czechs definitely knew what they were doing when they decided to turbocharge a simple potato soup.

You could say it’s just a potato soup, but the wild mushrooms, rich cream, poached egg, and fresh dill lend it a truly unique complexity. Luckily, I still had plenty of spring mushrooms stashed in my freezer, which made it even better! Since somebody from my family strongly dislikes dill, I keep it out of the main pot and just shower my own bowl with heaps of fresh dill at the end—works like a charm!

* If you are interested in the background story or more tips, you can find the full blog post here

INGREDIENTS

  • 20 g (1.5 tbsp / 0.7 oz) butter
  • 2 tbsp flour
  • 1 l (4 cups / 34 fl oz) chicken or vegetable stock
  • 4 medium potatoes
  • 300 g (10.5 oz) wild mushrooms (porcini, chanterelles)
  • 2 bay leaves
  • 150 ml (2/3 cup / 5 fl oz) heavy cream
  • 4 eggs
  • 2 tbsp vinegar
  • 1 tsp sugar
  • 1 small bunch fresh dill

INSTRUCTIONS

Melt the butter in a pot, add the flour, and lightly brown it to make a roux. Slowly whisk in the stock, bring to a boil, then add the diced potatoes and bay leaves. Once the potatoes are half-cooked, stir in the wild mushrooms and simmer until tender. Temper the heavy cream with a ladle of hot soup, stir it back into the pot, and season with fresh dill, sugar, salt, and pepper. Gently poach the eggs in a separate pot of simmering water with vinegar until the whites are set. Ladle the soup into bowls and serve topped with a poached egg and extra dill.

Fig and Blueberry Galette with Frangipane Cream

I decided to try my hand at a galette and paired the figs with fresh blueberries and frangipane cream. Added some flaked almonds to the crust for extra crunch.

Ingredients

Pastry: 250 g flour, 3 tbsp sugar, 1/4 tsp baking powder, 200 g cold butter, 1 tbsp vanilla sugar, 3 tbsp ice-cold water.

Cream: 100 g almond flour, 100 g butter, 2 eggs, 100 g powdered sugar, 1 tbsp vanilla extract.

Topping: 5 fresh sliced figs, 2 handfuls blueberries, 2 tbsp milk, 5 tbsp flaked almonds.

I quickly mixed the pastry ingredients together, wrapped the dough ball, and threw it in the fridge for 30 mins. I divided it into 4–5 smaller pieces (or you can just keep it as one giant galette if you're lazy lol) and rolled them out into rough circles.I whipped up the frangipane until smooth, then smeared a good layer right in the center, leaving a border around the edges.I piled the fig wedges and blueberries on top, then just folded the dough edges over the filling.I brushed the crust with milk, dumped some flaked almonds on top, and baked it until it turned nice and golden.

Mediterranean Zucchini Frittata – A quick summer brunch 🍳🥒

Frittatas are my good summer go-to when I want something quick and light . I had a zucchini sitting in the fridge that needed to be used, so I took it in a Mediterranean direction with sun-dried tomatoes, olives, red bell pepper, and fresh basil. It turned out to be a delicious addition to our Sunday brunch—even our younger guests loved it!

Ingredients:

  • 6 large eggs
  • 1 small zucchini, diced
  • 1 small yellow onion, diced
  • 1 small red bell pepper (or kapia pepper), diced
  • 3 sun-dried tomatoes in oil, chopped
  • 1 handful pitted black olives, sliced
  • 1 handful fresh basil leaves, chopped
  • 2–3 tbsp olive oil
  • Salt and freshly ground black pepper to taste

Instructions:

Dice the onion, red bell pepper, sun-dried tomatoes, and zucchini into small pieces. Sauté the onion in olive oil until translucent, then add the pepper, sun-dried tomatoes, and zucchini. Season with salt and pepper, and stir in the fresh basil at the end. Whisk the eggs in a bowl and mix in the sautéed vegetables. Pour the mixture into a small, lightly greased baking dish and bake in the oven until nicely golden on top.

It is equally delicious served hot, warm, or cold!

Ti hogyan készítitek a frittatát? Milyen hozzávalókat szoktatok beletenni?

Hozzávalók:

  • 6 db tojás
  • 1 kis cukkini
  • 1 kis fej vöröshagyma
  • 1 kis piros kápia vagy kaliforniai paprika
  • 3 db aszalt paradicsom
