Pork belly burnt ends super low, super slow. 8 hour smoke on applewood with water pan and applewood tubes, spritz at hour 3. Wrapped and braised 4 hours befoe glaze. So damn soft could probably breathe heavily on them and they’d melt

Been loving my PB Austin XL, side smoker is pretty slick too, keeps temp well below main chamber temp and has a adjustable airflow baffle to increase or decrease air and smoke allowed to escape
