Tamarind souce😋

Ingredients.

2 tbsp tamarind paste (or soaked tamarind pulp)

½ cup warm water

1–2 tbsp sugar or honey (adjust to taste)

½ tsp soy sauce (optional, for extra depth)

¼ tsp salt

¼ chilli powder (optional)

1 small garlic clove, minced (optional)

Instructions.

Mix the tamarind paste with warm water until smooth.

Stir in the sugar, salt, and soy sauce.

Add the garlic and chilli if using.

Simmer on low heat for 3–5 minutes, stirring occasionally, until it thickens slightly.

Try this out with your spring rolls, samosas, grilled vegetables, roasted potatoes, noodles, rice, and even as a salad dressing when thinned with a little extra water.
