Made ragu for staff food yesterday, made Yorkshire puddings for staff food today. Put together and had with mash.

Not sure how it's taken me 43 years to pair ragu (beef, tomato wine etc) with mash but it won't be the last time!

Had a hankering for a croque madame. The bechamel was made from scratch, it's been a while and definitely could have cooked the flour out a little more.

Didn't have the traditional cheeses on hand so used a mix of cheddar, sharp cheddar and some Parmesan for a bit of funk. Could have done with a touch more ham but otherwise it tasted incredible and I have way more bechamel than I needed so I shall be returning with better cheese.

Oh and a duck fat fried egg.

I no longer live in the UK but boy do I still enjoy the cuisine.

Now to treat myself to a nap.

Sat here with pizza the Hutt enjoying where it all began. That opening scene is such an assault on the senses and gets me gripped every time.
