Ingredients
75g vegetable oil
140g sugar
1 egg
1 tsp vanilla
45g cocoa powder
55g flour
Pinch salt
Tiny pinch baking powder
25g chopped chocolate
Method
Heat oven to 170°C and grease the Pyrex dish.
Mix oil and sugar well until glossy and well dissolved.
Whisk in egg and vanilla for 1 minute.
Fold in cocoa, flour, salt, and baking powder.
Fold in chopped chocolate if using.
Bake for 20–28 minutes until the top is shiny and the center is slightly soft.
Cool before slicing for the fudgiest texture.
