When should we book an all-inclusive to Cabo for January?

My boyfriend and I are planning a trip to Cabo in January, and we’re trying to figure out the best time to book. We don’t want to book too early if prices might drop, but we also don’t want to wait too long and end up paying way more.

Right now we’re leaning toward Hotel Riu Santa Fe, but we’re definitely open to other suggestions if there’s something you’d recommend instead.
Our budget is around $2,500 CAD per person for the full package (flights + all-inclusive).

For those of you who’ve been to Cabo in January:
When did you book, and did you get a good deal?
Is Riu Santa Fe a good choice, or are there better options in that price range? Any booking tips or things you’d do differently?
