Be gentle I’m very much a beginner to smoking meats. Dry rubbed leg quarters, sausage, and corn smoked with hickory and apple wood. All paired with potato salad.

Cornmeal Crusted Pork Chops

I enjoy cornmeal crusted fish I was curious how cornmeal would be on a pork chop. An experiment that turned out delicious. Season pork chop smeared with mustard and coated with cornmeal. Then pan fried and finished in the oven. Served with broccoli with pimento cheese sauce and rice with brown butter gravy.

Prime Rib Sliders

Steakhouse leftovers rehashed for lunch. Left over prime rib and two dinner rolls with cheddar and horseradish mayo. Only missing cause I didn’t have any is some cherry pepper relish.

Pecan Park Flea Market Closing

Jacksonville long timers and flea market fans according to the Jacksonville Daily Record the Pecan Park Flea will be closing in September. The land has been purchased by an auto dealership company. I know this flea market has dwindled over the years ever since the fire. I have many childhood memories of the family going to Pecan Park many weekends in the late 80s through late 90s and early 2000s.

Using extra/leftover bean broth

I like cooking beans on a regular basis depending on the beans and the amount of cooking liquid sometimes I have extra broth left over. Seems a shame for it to go to waste. I’ve used bean broth for soup bases. I’m curious about other or new ways to use leftover bean broth.

Not Glamorous but Delicious Southern Supper

Chicken and Rice, Butter Bean with Ham Bone, Cabbage, and Cornbread Muffin (cause I felt like being different instead of a regular pan cornbread). Of course a few dashes of hot sauce. This type of meal always reminds me of my Grandma.

Swimming in the St Johns

Seeing the Ironman swim in the river got me thinking. I realize that the river is much cleaner in current times. However knowing the history of what was dumped in the river in the past I don’t know if I could bring myself to want to swim in the river.

Ham, spicy salami, sweet salami, white am cheese with a salad of lettuce, tomato, and onion dressed with a mixture of mayo, spicy mustard, Italian dressing. All stuffed into a pita. Paired with some S&V chips
