The only thing that will grow in my apartment is mint 😭 So that's what I went with - made a fresh mint and cilantro chutney with some garlic and seasonings blended through it, along with these kebabs cooked in the oven and then finished in a pan.
The white ones are steamed chicken, the other plate has chili chicken momos.
I made these rolls for the first time ever. A lot of time and effort, but absolutely worth it!
This theme really was a curve ball. So I took the easy way out - I used tarot cards to "divine my dinner." It was fun, and the best thing is that I got to use two really ripe bananas I had lying around. The muffins didn't rise a lot - that probably was due to my old baking powder. But they were so soft and fluffy inside, probably my favorite banana muffin recipe so far!
The spice rub was a teaspoon of instant coffee, salt, black pepper, cumin powder, smoked paprika, chili powder, and garlic salt. I garnished the hash with crumbled feta, scallions, and some more paprika. To be honest, I couldn't really taste the coffee. The hash itself was so good!
Recipe taken from NYT Cooking. This has become a regular dinner in our household, especially when both of us have had long days and are tired. I use Trader Joe's pork gyoza and the sauce is peanut butter, hot water, soy sauce, rice wine vinegar, and garlic.
I'm a big fan of the classic diner-style pancakes made with buttermilk. This was my first time trying souffle pancakes. They didn't rise as much as I expected (I think that was due to my old baking powder), but they tasted like delicious cakes. These take time, but I wouldn't mind eating them once in a while when I'm looking for a more dessert-style breakfast.
The supermarket I shop at had strawberries on sale. So I made jam from a pound of strawberries, then used it for these thumbprint cookies. I've never made this before; they reminded me of JimJam biscuits (except those are sandwich cookies and have a layer of cream as well).
These are Mexican sugar cookies. I discovered them while looking for cookie recipes online. They are a perfect fit for the theme!
On my bucket list is Iran, especially the beautiful city of Isfahan. I made this slow-cooked beef and lentil dish topped with shoestring potatoes along with a refreshing Salad-e-Shirazi (from the city of Shiraz) with diced onions, cucumbers, tomatoes, and an olive oil and mint dressing.
I made a mistake and used phyllo pastry as opposed to puff pastry for the strudel. The stuffing was delicious but the super crunchy pastry made it extremely hard to eat this 🥲
Boston is gorgeous right now! So many shades of tulips all around the city.
A friend at work introduced me to sincronizadas, which are basically two tortillas filled with ham and cheese. I toasted the tortillas with garlic infused butter for a lovely crunch and also spread some inside before layering in the goods. Along with carrot escabeche on the side, this has become my new favorite breakfast.
