Is it really necessary to decarb before mixing with fat?

I’ve made cannabutter a few times by just adding the butter and buds in a vac bag and sous vide overnight. Comes out super strong.

Am I actually missing anything by not decarbing first? Time doesn’t matter to me, just want to extract as much as possible.

Also, anyone found any use for the stuff you strain out? I always feel bad getting rid of it.

What is it called when injera is layered with different wot and all packed together?

When I lived in Ethiopia I would sometimes order this at restaurants, but I can’t remember the name. If I remember correctly, it was packed up in a clay pot and then dumped out on a fresh injera.

I loved it. Basically like different pockets of fir fir all together. It was usually a mix of key and alicha wot.

Suggestions for meals similar to moussaka, baked pasta, etc?

I’ve been on a real comforting meal kick lately. My favorite things I’ve made lately are moussaka, eggplant parm and baked pasta.

I’m quite well versed in the kitchen and love a good cooking project. I like to make most of my food for the week on the weekends, so then I can just warm up dinner after work. I like that these kinds of foods taste better after a day or two anyway.

Really tempted to just make another moussaka, as that was my favorite one lately.

Open up any and all suggestions. I just want it to be comforting and basically a complete meal in one.

Spinach and cheese ravioli

Made 81 ravioli today, cause that’s when I ran out of filling. Set some aside to eat tomorrow, the rest are going to the freezer.

Injera.

Haven’t made it in a while. Pulled my starter from the back of the fridge and nursed it back to life over the last two weeks. Made the absit last night and baked the injera today.

Happy to post my process if anyone is interested. This is 100% teff.

Saw the cinnamon roll focaccia craze, saw the apples on my counter that needed to be used. I present: Apple Fritter Focaccia. 🤤

Based on the KA recipe. But, I subbed half the oil in the dough for butter and some of the water for heavy cream. Made my own cinnamon chips (I used fresh ground cinnamon, nutmeg and mace). Sautéed some apples in brown sugar and spice mix. Added the apples and cinnamon sugar butter on top after dimpling (chopped walnuts on half). Icing is some of the glazed apple sauce, heavy cream and powdered sugar. Oh, and I baked on a half sheet pan (doubled the KA recipe)

Guys. This is so good. I was planning to bring this to work to share tomorrow. Now I’m not so sure.

I’m back, need more help.

I finally got around to opening it up and taking a look at the gears. There was this weird almost leathery stuff broken up in the front of the housing. Any ideas what that is?

I didn’t go through taking the bevel gear off cause I don’t have the right tool to take the snap ring off. Any tips for that?

From what I could initially see, things are working on the surface. But, as you can see in the video when I hold the attachment thing in place, the gears slip. What’s actually slipping here? Is it the work following gear like I expected?

It’s a professional 600. Any help on what parts to buy or how else to troubleshoot is greatly appreciated!

Made some Ethiopian kulet foccacia

I had some leftover kulet (caramelized onions with Ethiopian spiced butter and Berbere cooked all day) and thought it would go great on foccacia, I was right!

I followed king Arthur’s focaccia recipe, added about 15% of teff injera starter and topped it with the kulet. The crumb turned out a bit more dense cause of the teff, but the flavor was awesome and it goes great with Ethiopian food.

Cooked over 15 pounds of onions today for Ethiopian food. Took about 7 hours.

I’m do this every few months and it is so worth it! Can whip up Ethiopian food for a quick and easy dinner. My house smelled amazing today!

Broke my mixer on a particularly hard piece of brown sugar. Looking for repair and parts help.

A few weeks ago I was making some cookies and didn’t realize that the chunk of brown sugar was as hard as it was. Mixer got stuck and then I heard a kind of snap.

It still turns around, but stops at any kind of resistance. Even while creaming room temp butter. After some research, I’m thinking it’s the worm gear and am planning to learn how to replace that.

Any other thoughts or advice on where to look for repair instructions?

ETA: I was worried that I had the older worn gear, but it seems like according to my serial number it was built in 2020, so I should be good with the available parts, right?

Also, does anyone agree that it’s probably the worn gear? Or what else could it be. Want to make sure I get all the parts I’ll need.
