Korean Spicy Seafood Noodle Soup (Jjamppong)

This is called Korean spicy seafood noodle soup, Jjampong. It’s up there with black bean noodles (Jjajangmyeon), and they’re always battling it out when it comes to the “What should we eat?” question.

I pretty much used all the seafood and veggies I had on hand, and this turned out to be the best noodle soup I’ve ever made.

Red beans & rice

The beans were simmered simply with onions, too much garlic, carrots, green beans, & smoked turkey legs. Once the beans finished I fished out the turkey and pulled the meat then added it back. The rice is simmered with chicken bullion.

Rice & beans has to be my favorite dinner. I grew up eating variations of this meal so it's very satisfying to continue the tradition in my way.

Today I did not want spice but I usually add jalapenos or at least cayenne pepper.

Some different food I made for my family vacation

Italian sushi: prosciutto, spicy salami, pesto, sweet roasted peppers, sun dried tomatoes, arugula, burrata, balsamic glaze
Pizza: vodka cream sauce with grated parm, fresh mozzarella and spicy salami topped with basil
Baked Brie: olive oil, brown sugar, pears, walnuts, rosemary, thyme :) served with sourdough

B.L.T.S.

Bacon lettuce tomato shallot on griddle toasted buttered sourdough, the shallots and salting and peppering the tomatoes is legendary also added some bacon grease to the griddle shit ton of mayo also is key!!!!!

“Whatever I had in my kitchen” burger

Turkey patty, mayo, salt + pepper, avocado, pickled red onions, Colby Jack cheese, sweet heat pickles, brioche bun

8.5/10, I thought it would be too vinegary with two pickled items but it was well balanced!

Butter Chicken and Naan

First time making butter chicken-turned out really really good.

Used a yeast free recipe for the Naan because I didn’t have yeast-actually turned out pretty good as well.

Overall a good night in the kitchen.
