Decided I need to eat more beans!

So tonight’s dish was a salmon fillet roasted for 20 minutes with some lemon juice and garlic. Finished with a sprinkle of sesame seeds.
I then made a cannellini bean salad with some Greek yoghurt, lemon, baby tomatoes and pomegranate seeds.
Also featuring some veg which includes homegrown carrots and green beans 🥕🫛

Holiday guilt

Just got back from a great week away and just reflecting on how, although I enjoyed eating different things to my usual ‘healthy diet’, I did struggle with quite a few feelings of guilt.

I had foods such as pizza, ice cream and pastries probably each day, although did a lot of walking too.

But what I struggle with is how guilty it all made me feel. Found myself comparing myself to other people and worrying that “I shouldn’t have eaten that”.

Waited a couple of days after getting home before weighing myself. I gained around 3 pounds.

I just hate the feelings that come with trying to enjoy myself occasionally 😫

Salmon with a load of veggies

Here I’ve made myself some oven baked chilli salmon with some roast sweet potato.
I’ve also got some homegrown courgette / zucchini which I’ve roasted, along with half an avocado and some broccoli and green beans.

Attack of the aphids!!

I’ve got pepper, cucumber, basil and tomato plants growing in my kitchen window sill. I’ve woken up this morning to find them all covered in aphids!

I wondered why the window sill was so sticky then I noticed them all.

I’ve quickly moved them outside and sprayed them down with water.

Any advice about what I should do? I’d like to keep them indoors ideally.

Really pleased as I’ve heard that cucumbers can be quite tricky to grow. In face only a couple of my plants seem to be doing anything at the moment 😁

Ideas for pasta substitute to go with bolognese sauce

Hey everyone,

I’m planning on making a spaghetti bolognese from scratch tonight.

I’ll be using low fat beef mince and adding extra veg as well.

I’ll be making pasta for the rest of the family, but wondered if anyone had any suggestions for an alternative I could try instead?

I guess I’m thinking something with less carbs but equally as filling.

Ive also been trying to incorporate the Mediterranean diet wherever possible so was thinking maybe something with chickpeas or would this be weird?!

Just looking for some ideas really 😁

Why do we sometimes get such intense nostalgia?

I’ve had one of those days where I’ve fallen down a rabbit hole of looking back on photos and feeling such a weird combination of happy and sad.

I would do anything to go back to the 90’s or early 2000s and do it all again. Just seeing some pics from 2009 when I was on holiday in Prague - everyone just seemed to be different, nobody looking at their phones, people actually being present.

Holiday pics, old school friends I never see anymore, loved ones who are no longer here. Such feelings!

Butterbean and feta medley

One of those dinners where you throw everything together and it actually turns out great!
I cooked some red onion, courgette, mushroom and garlic in some extra virgin olive oil. Then just added some butterbeans and tinned tomatoes and cooked through.
Finished with some fresh coriander and feta.
Bonus points because I bought the courgettes, coriander and mushrooms for just 10p each in the Co op 😆

Oats making me feel hungrier?!

I’ve been having overnight oats for breakfast now for a couple of weeks.

I make them with some chia seeds, skimmed milk and kefir yoghurt. Topped with a very small amount of sunflower seeds and almonds.

However, I’m finding that this meal is just not keeping me full! I mean, it’s absolutely delicious, but I feel ready to eat something else about an hour later.

I probably feel hungrier than if I’d skipped breakfast altogether, which is what I used to do.

I think I used to feel like this when I occasionally have porridge too.

Maybe there’s not enough protein?

Anyone else experience this?

Jersey royal potato and egg salad

Had to buy the new season Jersey royals when I saw them in the supermarket earlier. So delicious!
I steamed them for 15 minutes then served with soft boiled eggs, cucumber, sweetcorn, red cabbage, tomato, carrot and a few Greek olives.
The sauce was just made by combining some Greek yoghurt and Dijon mustard.

Dinner out Med style!

Just had such a nice meal out - chicken kebabs, humous, rocket salad, yoghurt and pomegranate seeds on a Greek style flatbread. So filling as well!

Really enjoying the simplicity of roasting a bunch of different veggies, this has been my go to dinner option lately!
This evening I did baked sea bass with sun dried tomatoes, along with roasted sweet potato, courgette, red pepper, cherry tomatoes and red onion. Topped with some fresh herbs 🌿

So basically I’ve managed to lose almost a stone in the past year. I try really hard with healthy eating, choosing the best options and also doing plenty of exercise. I’ve done a bit of calorie counting but have tried to relax this a bit recently.

I’m either running every day or going to the gym. I probably have 1-2 rest days per week but still hitting at least 10-15,000 steps each day.

My issue is that sometimes, for example when eating out, I just can’t help but to go overboard. For example, finishing off leftovers from my family’s plates (I know this is terrible). It’s like I can’t stop myself. I’m fact, yesterday we had a meal out and my teenage son even said - “mum, it’s like you’ve never eaten before!”

After this I just felt so guilty and ashamed. Just wondered if anyone else ever does this 😭
