This cake has a couple more extra steps than most, but this is now my go to recipe. The apricots are so bright and juicy, and when paired with the sponge cake that has the lemon zest in it it is unnnnreal. This is our take on a traditional recipe so it is a little different than your norm!

Chocolate ganache in 2 minutes!

If you’ve always thought chocolate ganache sounded fancy or difficult, it’s actually one of the easiest things you can make. I literally have stopped fussing with buttercream or any other frosting.

All you need is:
• 1 cup chocolate chips
• 1 cup heavy cream

Microwave, stir, and you’re done.

This is literally the most noob friendly recipe I can think of outside of toast. Enjoyyyyy and let me know if you make it!

Actually easy Chocolate raspberry no bake mascarpone mousse

I know it SOUNDS complicated, but this is a great intro treat if you want to give some stove top treats a try. The measurements don’t need to be exact so there is a lot of wiggle room here.

Ingredients needed:

Milk chocolate chips

White chocolate chips

Cream

Raspberry

Drizzle of honey

Greek yogurt (high protein)

Mascarpone

It feels like every shrimp dish has pineapple, and since I am allergic we’ve been doing new versions of recipes Thomas has made but with mango instead and there has been some real winners. We made this shrimp bowl for dinner last night and it was just incredible.

I’ve been diving into no bake treats lately, especially ones you can make with limited resources. This one does use an immersion blender but is a great intro recipe that you basically can’t mess up. It has a creamy filling that’s surprisingly high protein, and a mango ganache topping.
