The partners come from different parts of Thailand and each is bringing recipes from home, so it's meant to go past the standard menu. Jason Kim, one of the owners, says the name is about the smell and feeling a room holds onto. As of late July they were aiming to open in mid-September, and the board signed off on their drinks application on August 4th.

The plans are a small room, 24 seats at tables and seven at the bar, open from noon to midnight each day. Background music indoors, no DJ or live music. It goes in front of the community board in September.

Chuck Charnichart of Barbs B Q in Lockhart and Jonny White, who helped build Goldee's outside Fort Worth, are opening a place called Kirbee's up in Greenpoint. Before that opens, they're having a preview at Bar Snack while they're in the city. Charnichart won the Michelin Guide's Texas Young Chef award in 2025, and Goldee's was No. 1 on Texas Monthly's top-50 Texas barbecue list in 2021 and No. 3 on the 2025 list.

They put in for a liquor license at the end of July. The application asks for midnight most nights and 2am on Fridays and Saturdays, a small bar at the back of the room, and DJs. Right now it's tea and pastries with the door closing at 6pm on most days.
The bar is standing room, but the overall space is rated for 74 people. There's a hearing on it August 10.

One of the co-founders, Jack August, says he's a born and bred New Yorker and an East Village resident, and he's pitched the place as familiar food with a twist, sandwiches you think you've had but haven't.
It had its pre-opening health inspection on July 30th, which is typically one of the last approvals before a place can open.

Peppa's got a temporary permit last week to serve while its full liquor license works through. A couple locations already serve drinks, but the Park Slope location is the latest to file for a license.
The owner is a Georgian artist and the plan is khachapuri and small plates to go along with the wine, in a room set up like a gallery. Their beer and wine license just came through and their Instagram is teasing the opening as being very soon. 40 Ave B
The team behind it is associated with Hart's, The Fly, Cervo's, and Eel Bar. They self-describe as an oyster bar with classic cocktails and a natural wine list

Open from 8am for coffee and pastries, drinks served in the evening. They plan to have room for book clubs and readings. Looks like a nice third space for the neighborhood.
