Nailed it!

Nailed it!

This morning I had a customer stop in to pick up an online order at my coffee shop. He said his name was Jeeves and he was on a road trip with his boss. He explained to me that his boss was a “coffee forward” person who usually ordered black coffee from big chain coffee shops because while his favorite drink was a flat white, his experience has been that no matter what he ordered, be it cappuccino, flat white, or cortado, extra shots, or “dry” all of them were prepared the same way: add coffee and fill the rest of the cup with whatever amount of steamed milk and foam you happen to have in the pitcher at the time.

He continued his story, explaining that despite all of these bad experiences, as he was placing the online order for his boss, he noticed that my coffee shop also offered a “macchiato,” which he assured his boss would not be prepared like a giant foamy latte like all of those other drinks because macchiato means “spotted” in Italian and is traditionally prepared by placing a mere dollop of foam on top of a shot of espresso. Even the picture on the app showed a shot of espresso with the tiniest amount of foam resting on top. His boss reluctantly agreed to give it a try.

Hearing his story invigorated me. I happily prepared his macchiato, taking the largest cup I could find in the store, pouring in some espresso, foaming some milk, and adding a dollop of foam on top. Turns out I had some extra foam left over, and as I always say “waste not want not!” so I poured it all in. As I handed Jeeves his order I happily exclaimed “I gave you some extra foam!” and I sent him on his way. I only wish I could have been there to see the look on his boss’s face because I’m pretty sure I totally nailed that macchiato (pic attached).

I hate how every roadside idiot can have an opinion on youtube. Never had a good espresso probably.

I will order my butler to pull an all crema shot to celebrate this lie.

My manager

The grinder at my job grinds the beans too course but my manager won’t let me change the settings and insists he knows what’s best, as a result my morning coffee always tastes weird. What should I do in this situation. I’m Open to any suggestions.

How long does it take to break in an espresso cup?

Getting sour shots in this bad boy! Is there a specific amount of break in time before I can get more fruit and clarity from this cup? NOT AI

Puck Screen Temperature Drift

Lately I've had my butler steam my puck screens before he brews my espresso. I've noticed that the espresso had a slight tinge of what I would call citrus note, something more along the lines of a lime rather than a sharp lemon, something sweeter like a tangerine, but more of a faint hint of lime.

Assuming that this could be a slight issue with temperature, I asked my butler if he was pre-heating my puck screens, and to my surprise HE WAS NOT, so I instructed him to do so. Being a bit of an engineer, I decided to temperature test the shots on my La Marzocco Linea Mini (matte black with all custom walnut, with the built in scale, plumbed in direct to my whole house BWT filtering system), and I was SHOCKED to see a thermal deviation of .08 degrees, which I'm sure was the culprit of the lime aftertaste I mention eailer. Understanding how the temperature of the basket and group affected the final shot, I couldn't believe such a tiny puck screen could make such a HUGE difference in tase. Not only is the overly sweet lime/tangerine afternote gone, the espresso now has more of an apple sweetness, along the lines of a fresh Gala apple in the fall. It totally changes the entire coffee from a good 88 or 89 point cup into something clearly in the 90+ range.
