You weren’t kidding about the water - 0 water + TWW

So ever since I’ve started pour over I’d see a post about water being a key variable to change and improve coming up every now and then. Making it like a huge deal.

It’s just painful - due to counter / fridge space, having integrated fridge pitcher already etc. So I’ve avoided for 6 months. Did a mix of either brita water or Volvic for a while.

Finally moved to making my water. Still not perfect and basic: zero water + TWW light profile. Right now 90ppm.

But wow. What a difference it makes! I’ve had a crazy good lasso decaf, and milky cake much less muted! Milky cake while nice was always muted as filter for me, v good as espresso but just good/ok as filter. I’ve had a much better cup just now of milky cake. Both cups were so balanced, nice sweetness. The Lasso one was outstanding, best cup ever for me - it was good before! But wow the taste so so much better, the balance incredible, the notes insanely good (i know it may be infused - it’s the ombligon decaf one) perfect with new water.

So I guess, thanks all. I know still a lot to learn. And at some point upgrade K6, almost regret buying it, + eventually move to lotus drops I guess…

Onyx - Geometry

Really enjoying Geometry.

This morning: K6: 85 - bloom 50 then 120-180-240-300. In ~03:10. Roughly close to their recipe?

92 Celsius

I bought it to run as espresso but prefer as pour over.

I have been pleasantly surprised.

But I wonder if there’s more to unlock? People suggestions? Do I need to go finer, higher temp?

Good body, gentle acidity, juiciness, stone fruit territory rather than earl grey.

Wine in the morning - B&W Lica Torres

Waking up. Getting a dose of Lica Torres out. And making a double shot, and drink port wine.

Coffee is life.

I could even push it further but this time the port wine not overwhelming. Just perfect in a latte. What a coffee. I shall buy more and freeze.

First time w/ Tanat - La Papaya

First time with Tanat. Above coffee - B7 Anaerobic.

Using K6 - quite coarse. B75 crystal eye.

20 - 300

Really good cups. Nothing fantastic, but consistently good cups. Defo in the prune / choco notes.

Will defo buy again from Tanat. Tried this one as espresso too but not great.

Please don’t tell me I need a new grinder, I don’t have spare cash at the moment, and already having issues w: my DF54…

Qima - Co-ferment La Pradera

Lovely coferment at Qima.

Well brewed pour over - good body and the co-ferment was well extracted, gentle aromatic, peach, rose. V nice.

It smelled like B&W The Future, but a more gentle cup.

Acidity question - washed

Hello, so I’m brewing this at the moment.

To preface: I did freeze the whole bag, and it’s now out, the whole bag.

I’ve made a few decent cups. And given I’ve used hard water, and I don’t think I’ve done a brilliant job with freezing, I was pleasantly surprised. Also, it’s from their cheaper ritual series.

Today: 20g to 300, in B75, 2:30. Circular pour - bloom + 3 slow equal circular pours.

It was another pleasant cup. It had nice acidity to it, round, gentle; but now questioning if acidity is expected with this coffee and whether I’m under extracting. It had good enough body for me. It didn’t taste sour to me.

I don’t always get acidity for other coffee, so it’s not something I get with all beans/brewers/pours. For example, I have a thermal shock bag from Bermudez, and acidity not on same level as this morning.

Is what I’m getting sensible? Nothing to necessarily changed as a must?

Nice cinnamon Leche this morning

I thought it may be undrinkable - 19.5 to 32 in 42 seconds.

In a latte, no problem. No bitterness or astringency - which I got on a recent 19.5 to 44 in 28’.

I’ve messed up adjustments and went too fine. Lovely latte.

The Future saving the afternoon

This one is the wildest I’ve had. V strong peach and weird enjoyable taste, bit like hemp juice lol

Just made it as iced pour over. Closed switch bloom, 2 equal pour, over ice. ~90.5c 20 to 250; about 140g ice, not all melted - so no exact science.

The best cup I’ve made with this bag - also made really good americano too 20 to 60g.

Really enjoying playing around with the switch at the moment.

- no need to comment about the fact it’s infused or artificially flavoured - we know the weird funky taste doesn’t come from pushing the coffee itself…

Fantastic lattes - Native

Well ignore the latte art; got bambino steam wand clogged and finished on nanofoamer lol

Otherwise, brillant espresso, drunk as latte; roughly 1:2 in 32’. 8 sec preinfusion. I’ll go a tad coarser tomorrow.

Top of my list for morning lattes.

I love this.

Brew a couple of cups 15-250 and 20-300 in V60. Such a nice cup. Cups I brewed were not funky. I guess I could get more clarity, stronger cinnamon.

The way I brew it cinnamon is a note. I guess I could push it a lot more.

Yum. Even with hard water. Will get better water tomorrow.

Looking fwd to trying in espresso!…

First time with Tanat

Hey, so first time with Tanat. This B7 Anaerobic.

I am planning to start it with my current V60 15 to 250 recipe, lowish agitation, 93c. ~80 on K6. ~ 2:30/45.

Any advice? I guess go 1:15 would be a recommendation?

Also, can I run this as espresso? Thinking 1:2.5 I. ~ 28’.
