Could co-op be better than McDonald's?

I've worked at McDonald's since November of last year. I'm good at what I do but I had a look around and noticed all of the retail stores pay over £13.00 when I'm on 10.80, including co-op which is £13.05. the co-op in question is also 25 minutes closer to me. I'm used to having to do a lot of people's jobs & dealing with customers, my main concerns are sorta just how dysfunctional co-op is? At maccies barely anything works and we just deal with it, but we're quite lax with booking days or time off even if unpaid, which is pretty important to me because I have contractual commitments with a sports team and events pop up on almost random dates.

Am I going to be more or less stressed working at co-op? & Also is it lonely? Seems there's only ever one or 2 people on staff

2011 Peugeot 207 1.4 VVTi, Temp gauge doesn't move even after 30 minutes of driving (stuck at the bottom) but will randomly go up to 90°C and move up and down. New thermostat needed?

Had the car for about a month, only issue seems to be a slightly bouncy idle at 1200 for 1 or 2 minutes after I haven't used it, but that seems to have mostly fixed itself. I hadn't really paid attention until a couple days ago but my car will spend the majority of its time on the absolute bottom of the temp gauge, and even when it does go up to 90 (direct centre, assuming ideal running temp) or up at all, it will very quickly go down. I'm assuming my thermostat is opening too soon and I will have to replace it. Is it worth getting a full assembly?

Do most mechanics (outside of high level series) work for multiple teams across multiple championships?

My career aspiration is to be a pit crew/mechanic. I've seen postings for GT3 No1 mechs for around 50k/y which makes sense since drivers will be paying the teams a pretty penny, but for things like junior championships or overall lower level championships, are the mecha working for multiple teams? Say Fiesta junior for example, a season will cost about 60k/y and I can't imagine that the majority of the cost is straight to the mechanics wages especially when there'll be multiple.

Can't get pedals to feel smooth

I have simtrecs propedal mk1. No matter what I do with the elastomers (including a lot of silicone grease), they always feel notchy/sticky in some way. What am I supposed to do? Contemplating just buying new pedals at this point.

So I bought a 2nd hand GO 1 because it was insanely cheap (almost definitely stolen but that's not my problem) and my impression of the GO cameras was that it was good for filming long stretches, because it seemed to be the camera that all the drivers I watch use for their helmets. Didn't do proper research, silly me, do as far as I can tell I can only film 30s clips.

There's gonna be periods I don't need filmed because I'll just be going in a straight line (doing a track day) but still, what's the best way to get close to pretty much seamless footage?

I'm planning on really cheaping out on a camera which will definitely not be stabilized as I don't want to spend 150 on an insta360 go. How good is sofware-stabalised video? And any reccommendations for software to do it?
