Isernio's Al Pastor is very good

We don't buy a lot of prepared meal stuffs, but this is worthy. We had been buying a similar product at Winco(tastes like chorizo), but this is far superior.

Who doesn't love a well seared Al Pastor taco, but most in my area never see a griddle, which to me, imparts a great sear, excellent flavor, and quick cook.

I used one of two packages and lined a large cookie sheet with parchment, spread it a bit by hand, then with another sheet of parchment and a rolling pin, flattened it to about ¼" thick. Remove the top sheet.

I set the Blackstone to 6 and preheated for 6 minutes. With the parchment edges folded back, I flipped the entire sheet onto the grill, and peeled off the paper. It was sectioned into manageable rectangles and flipped at 3 minutes. At 5 minutes in, begin dicing the sheets into taco filling crumbles. Remove the meat by about 6-7 min. On a warm tortilla add meat, white onion, cilantro, cheese, and Tapitio.

These are so good, I would not hesitate to serve them to a gathering. They actual taste like Pastor; juicy and flavorful. The only thing missing is the lardy aftertaste, and flavored burps which usually follow. Strong buy!

Get a spare or two, valley dwellers

Yesterday we dodged the bullet of all summertime bullets. I was in the yard around 2 pm when I heard the dreaded 'click', then nothing at our AC's condensing unit. AC(78⁰ setpoint) was trying to kick on for the first time of the day. I went inside, and saw the state of the stat, 79⁰ inside temp & 78⁰ setpoint, but there was nothing, just the eerie sound of dead calm in the house, and the creeping swelter of valley heat making its way from the attic to living space. I temporarily raised the setpoint to 85 in order to evaluate the problem.

How prophetic was it that my son and I had a conversation 24 hrs earlier, wherein I said how lucky we were to not have AC problems over our countless years in the house. Murphy happened to be eavesdropping, and would rear his ugly head, and soon.

In a panic, I ran to the garage cabinet, tossing things aside until I found them, the life giving spark to our AC unit, the spare 45mf capacitors I had stored many years ago, in preparation for just such an event.

Within minutes I had removed the AC unit fuse(electrical disconnect), the service panel on the condenser, and de-energized the capactitor. Normally a meter check of the capacitor would be in order, but it was nearly 100⁰ already outside and had crept to 80 inside, so, damn the torpedoes, a quick swap of the capacitor was accomplished. Panel and fuse were reinstalled. I went inside, dropped the setpoint back to 78, and BOOM, the telltale click of my stat inside, followed by the startup of the system fan and, hell yes, we're blowing cold air again.

A total outage of 20 minutes, which could have been days waiting on a service person, was easily tolerable. The procedure really is as simple as changing out a light bulb if you have any skills at all. Research the capacitor on your AC unit and keep a spare or two, just in case.

18 months in and we're loving our girl

This sweetest of girls was hanging around a construction site begging for food. At 45lbs and having every parasite known to man, we took her in. 18 months in @ 80lbs and she is THE best dog we've ever had. But damn, that prey drive!

Marco Dog park - owners beware

Heads up dog parents. There is a breach in the perimeter fence. My adventurer has escaped twice over the past week. I wired shut the location assumed to be the culprit, but he got out again this morning. I discovered another location(NE corner on the hill adjoining the commercial property) where the unhoused have bent fence posts to make it easier to access the shortcut through the park.

I'll notify the city, but if you have a wanderer, keep an eye on their movements until the city can resolve the issue.

Pamela's PBM has it's uses

These are so good. I wouldn't use it for cookies, but Pamela's PBM makes some of the best muffins and waffles in the GF world. This is the closest thing to duplicating good old banana nut bread that your mom used to make. I like the muffin method to increase the delicious crispy edge surface area. Eat a few while fresh, freeze the rest, then reheat as needed; power level 2 micro for 60 seconds, then air fry 6 mins at 325.

It's not a cane sugar version, but the 16oz tallboy with 250th USA anniversary print is the best Coke available in a can. It's not even close.

If only you could get them in a value multi-pak.
