Four hours in, how do I

At four hours the bark has a nice color. Using cherrywood with charcoal. Internal temperature 156°. Wrap with butcher paper or foil, or both? I spritzed once with apple juice and ACV. This is a nine pounder and I want it to be ready for supper. I don’t want the bark to dry out. This may be a crazy set up but it does well for home barbecue. Would finishing at 275° be too hot?
