Alternate Bowls?

Hi again. With many thanks to the advice last week, especially from u/RIMixerGuy, I successfully exchanged my KA 8qt commercial unit. New one is great!

Question: can I use the bowl from my old KA Professional 600 with this new Commercial unit? It seems to fit, but I don't want to screw something up!

In search of.... All purpose dough, large batch

Hi there!

Looking for a great multi-purpose dough recipe that can be scaled up or down. I'm thinking for sandwich bread, buns, cinnamon rolls, etc. I'd like the formula to be scalable from "normal" household amounts all the way up to bakery scale for several loaves/dozens of buns (for donation).

Let me know what suggestions you have!

Crumb diagnosis please

Good morning,

I make sourdough regularly and most of the time it turns out great! Once in awhile though I get batches that just don't have the oven spring I'm looking for.

Yesterday I made 5 loaves to donate to some needy families in my community, but I'm worried they're not up to snuff!

Is it a shaping issue? Over/under fermented?

Edit: the loaf with the crumb shot is the ugly one I'm keeping. I've added a picture of another loaf from this batch in the comments

Per loaf:

-450g strong All purpose flour (Canadian, so essentially bread flour)

-50g sifted whole wheat flour

-~360g water (+/- a bit depending on feel)

-100g strong ready-to-go starter

-10g salt

Mix flour, water, starter together. Fermentolyse for 30mins. Mix in salt.

Stretch/folds every 30-40 mins 3x, make sure dough passes window pane.

Let rise double.

Pre shape. Rest 10 mins

Shape. Place in banneton. Cover in plastic bag. Fridge overnight

Open bake: preheat pizza stone and a cast iron pan for 1-2 hours at 500. Slide bread in, add water to cast iron pan to create steam. Lower oven to 450, bake for ~40ish mins (until as dark as I like and thermometer registers about 205°f)

Kitchen Aid Commercial Stand Mixer - locating pin issue

I just opened my new KA commercial stand mixer for the first time. Went to remove the bowl to wash it and the locating pin came out with the bowl. Is this....normal? Or do I need to exchange the unit? I can set it back in, but it's not in tight

Saskatoon berries - recipe question and request

Hi there,

I have a glut of frozen saskatoon berries (aka serviceberries for those not from the Prairies). I'm having a hard time finding "tested" canning recipes since they are not a hugely common berry. I did make Bernardin's saskatoon-raspberry jam, which is amazing. But I'm hoping to make some canned saskatoon pie filling, pancake syrup, and/or coulis. Does anyone have tested/safe recipes for saskatoons??

Pomona's Pectin - jam quite firm?

Hi! I made strawberry jam (water-bath canned) the other week using Pomona's Pectin and honey as the sweetener. Although the jam tastes pretty good, I find it quite firm and almost...bouncy? Is this typical for Pomona's? Anything you suggest for next time?

Question - water bath

Just made a batch of strawberry jam, using Pomona's Pectin and honey as the sweetener. Followed all of the Pomona directions EXCEPT I forgot to leave the jars in the canner, stove off, for 5 minutes after the 10 minute boil.

The jars have all done their telltale "snap" to indicate sealing as they cool. Will they be fine?

Sensitivity settings missing??

Hi! Just set up my new Hummingbird Feeder (the one with 2 cams) and I have had almost 200 notifications/captures today, all of blowing trees etc. As such, the camera has used 30% battery in ONE day!

Anyway, I googled what to do and it said to go to moment settings and adjust the sensitivity slider. WHAT SLIDER?! All I have is cooldown time, notifications, and recording mode. None of those includes sensitivity settings.

I'm on Android if that makes a diff?

UPDATE in case anyone searches this in the future: Support informed me these cams have no sensitivity because they default to high in order to capture lil Hummingbird movements.

Advice please: 2 questions

Question 1:

I have buds pro 2 and I quite like them. There's nothing wrong with them, but I'm finding myself eyeing the pink gold pro 4 on Samsung's site. Is the upgrade expense worth it? They are $329 CAD, not insignificant.

Second question:

My husband needs ear buds. He uses a mac computer and android phone - he will be using his earbuds from both devices, depending. Should he buy Airpods or Galaxy Buds? Or something else?

Hey there. Buying new all seasons this spring. The sticker in the door of my 2016 F56 says I need 205/45r17 XL. Is the XL really required?

I'm happy to keep runflats, the peace of mind is worth a lot to me.

Currently looking at these:

Bridgestone - DRIVEGUARD PLUS (not XL)

and

Pirelli - CINTURATO P7 ALL SEASON Run-Flat (XL and same as my current all seasons).

From Costco I can get the Bridgestone for $1119+tax installed (Canadian) vs the Pirellis for $1507+tax installed.

What do we think? If I don't need XL I may go for the Bridgestone....

Any other tire shopping factors I should consider?
