Katsu-style Piman and Shiitake Nikuzume, homemade Shibazuke

I used extra tsukune mixture to stuff the piman and shiitake. Shibazuke was made with umezu from this Summer’s batch of umeboshi.

Blanched thin-sliced pork loin, leaf lettuce, mizuna, myoga, tomato, momiji oroshi and goma-dare. Kabocha and shiitake miso soup.

Double Chocolate Cookies (single serve)

This was a spur of the moment “typhoon watch” activity, using what I have on hand - Van Houten 72% bitter cocoa powder and a chopped up German bitter chocolate bar from Gyomu Super. The cookies are soft but not greasy and very tender.

I followed this recipe, converting the bake to 170C for a little under 13 minutes.

Aratama Katsu Tei

Feasting after a visit to Kamakura Daibutsu. The katsu was delicious and perfectly cooked. They have a blood orange salad dressing that is absolutely divine!

Rehab and home PT, post-surgery for Grade 5 IVDD

Holly was diagnosed Grade 5 IVDD on 20 March, 2026 and had a right T11-T13 hemilaminectomy the next morning. She has recovered very well and was fully discharged by the neurosurgeon this last week. Holly will continue going to rehab one time per week for laser therapy, acupuncture and hydrotherapy and she also completes a prescribed home exercise program every day.
