Sourdough bagel help needed

Something is off… 1) doesn’t oven spring as much as I’d like - seems flat, 2) not much blisters, 3) feels gummy. Help!

Yields 10 170g bagels

Ingredient Weight Baker's %
Bread flour 929g 100%
Water (ice cold) 469g 50%
Active starter (at peak) 251g 27%
Sugar 25g 2.7%
Salt 17g 1.8%
Diastatic malt powder 10g 1.1%

Boil
1800ml water + 36g barley malt syrup, no salt, no lye.

Process
Mix: Combine flour, sugar, salt, malt, starter, and ice-cold water. Mix in a spiral mixer (Ooni Halo Pro).
Bulk ferment: Until 50% bigger
Divide and pre-shape: Portion into 10 pieces at 170g each, round into balls, and let rest ~10m lightly covered before final shaping.
Shape: Rope method into rings.
Cold retard: 48-72h in the fridge.
Boil: Straight from the fridge.
Bake: 500°F on baking steel. Steel reads at least 480F. 10m with steam on lava rocks under steel. Rotate sheet after 5m, bake 10-15m longer.

Too much coal? It’s an L

Gonna do an overnight cook. 2 7-lb bone-in pork butts. Emptied a bag of JD XL in the L and it had more coal than I thought. A lot of small pieces too. Should I take some out? Worried about fire going out due to lack of airflow.

I have almost 3 full days with 2 kids (5, 9). Staying downtown. Weather looks dece. 50 low, 70 high. Should I pack a jacket?

Day 1: maono/dick’s/ox burger, elliot bay bookstore, Explore chinatown (tai tung or kau kau for dinner)
Day 2: rent a car and head to the beach? Alki? Discovery park? Discovery seems to be a bit of a hike from parking. Pick up un bien/i love teriyaki or dine in at local tide for lunch on the way? Thinking of ordering ak pizza and picking up by car for dinner
Day 3: ludi’s? Ube pancake. pike place, beechers, chowder, hellenika, okinawa teriyaki (rainier too far), maybe chihuky/space needle (skipping spheres)
Day 4: fly out

Is renting a car a good idea? Uber rental is only like $40/day.

I am on a payment plan and I don’t want to pay off the phone.

A few months ago, I was told by a rep (in-store) that it’s possible to unlock for travel and use a local eSIM while abroad. I called back today and that rep no longer works there and I am told no unless I pay off the phone. Then the rep goes on to say that I can have it unlocked for 1 month and use a local eSIM. I will be traveling for 2 months.

Is using a local eSIM on a locked phone while abroad even possible? Has anyone done this?
