Fried rice with tofu, mushrooms and broccoli

Crisped up some tofu and put it together with left over jasmine rice, mushrooms, broccoli, eggs, garlic, ginger and scallions. Sauce was made of dark and light soy sauce, oyster sauce sugar, white pepper, Shaoxing and a pinch of MSG. Turned out pretty good on a shitty Monday

Crispy soy ”beef”

Double fried soy strips, red onion, sliced carrots and scallions in a sauce made of orange, soy sauce, Chinkiang, ginger, garlic, sugar, sesame oil, agave syrup and cornstarch.
Also rice vinegar, soy sauce and sugar pickled cucumbers. Added green parts of the scallions and some toasted sesame seeds on top.
All served with some rice.

Cappellacci filled with oven roasted tomatos, mascarpone, parmigiano and basil

For this one I wanted the tomatos to shine so I baked them for three hours together with some garlic. Then chopped them roughly and added some mascarpone, parmigiano and basil. The sauce was just some browned butter and pasta water. Topped it all with more parmigiano, black pepper and basil.
Felt like summer and sunshine on a plate 🍅🍝

Homemade cappellacci with roasted zucchini, ricotta salata, grana padano, lemon zest, browned butter & basil

Served them with a basic browned butter sauce and some basil because I wanted the zucchini to shine and be the star. Topped it all with some crumbled ricotta salata, parmigiano and cracked black pepper. It felt very much summer and Im quite happy how it all turned out 🍝🥒🧀

Noodle salad with crispy tofu

It’s so fucking hot and this heat wave doesn’t really make me want to cook anything. But I still need to eat so decided to go for a cold noodle salad filled with rice noodles, fried tofu, crispy greens, dressing and top it all with some cilantro, black and white sesame seeds and peanuts. Added some sliced chili (out of picture) too. It was actually perfect while sweating like a pig 😅🥵

Noodle salad with crispy fried tofu

Heat wave and I’m melting away. Decided to go with a fresh and cold noodle salad filled with nice and crispy greens, fried tofu and cilantro
/coriander, black and white sesame seeds and roughly chopped peanuts. Added some sliced chilis (out of picture) on top for extra flavor. It was very nice and delicious 🍲

Homemade ravioli with roasted onions and Taleggio

Roasted onion and Taleggio filling, served with brown butter, sage, Parmigiano Reggiano and black pepper.
The onions was slow roasted at low temp for almost three hours in the oven, but I think it was worth it. Pretty happy with how they turned out!

First time making tortelloni

Made tortelloni filled with roasted red bell peppers, Provolone, Parmigiano and a little bit of lemon zest. Had them with a pretty light tomato-butter sauce, and Parmigiano and basil.
This was my first time making tortelloni so there’s room for improvement but it was fun and overall I was very happy with this dish. The outcome was delicious! 🍝

Tofu udon bulgogi

Made vegan bulgogi-style udon for dinner tonight.

Used grated tofu, udon noodles, gochujang, miso, garlic, ginger and scallions. Turned out pretty good for a shitty Tuesday
