Cinnamon Biscuit French Toast - I thought this might be dense and too much, but the biscuits were perfectly crispy on the outside and light and fluffy in the middle. The perfect vehicle for butter and syrup to soak into!

If you like a good gooey cheese pull, this mac recipe is for you. Can you guess the secret ingredient?

Recipe from Serious Eats
https://www.seriouseats.com/the-food-labs-ultra-gooey-stovetop-mac-cheese

Ingredients
1 pound elbow macaroni
Kosher salt 🧂
1 (12-ounce) can evaporated milk
2 large eggs 🥚
1teaspoon Frank’s RedHot or other hot sauce
1 teaspoon ground mustard
1 pound extra-sharp cheddar, grated (see notes)
8 ounces American cheese, cut into 1/2-inch cubes (see notes) 🧀
1 tablespoon cornstarch
8 tablespoons (1 stick) unsalted butter, cut into 4 chunks 🧈

Directions
Place the macaroni in a large saucepan and cover it with salted water by 2 inches. Bring to a boil over high heat, stirring occasionally to keep the pasta from sticking. Cover the pan, remove from the heat, and let stand until the pasta is barely al dente, about 8 minutes.

Meanwhile, whisk together the evaporated milk, eggs, hot sauce, and mustard in a bowl until homogeneous. Toss the cheeses with the cornstarch in a large bowl until thoroughly combined.

When the pasta is cooked, drain it and return it to the saucepan. Place over low heat, add the butter, and stir until melted. Add the milk mixture and cheese mixture and cook, stirring constantly, until the cheese is completely melted and the mixture is hot and creamy. Season to taste with salt and more hot sauce. Serve immediately, topping with toasted bread crumbs if desired.

Notes
Use a good melting cheese or combination thereof, like American, cheddar, Jack, Fontina, young Swiss, Gruyere, Muenster, young provolone, and/or young Gouda. To reheat the pasta, add a few tablespoons of milk to the pan and cook, stirring gently, over medium-low heat until hot.

Gooey chewy brownies with crackly top. How do you like your brownies?

I love when they have a shiny top and are a tinge underbaked but still have a good chew!

If you like your Mac and Cheese extra creamy and ooey gooey, this pot is for you (recipe in body)

Recipe: https://www.jessicagavin.com/macaroni-and-cheese/

Ingredients

4 quarts (3.8 L) water
4 teaspoons (24 g) kosher salt, divided
1 pound (454 g) elbow macaroni
5 tablespoons (75 g) unsalted butter
6 tablespoons (54 g) all-purpose flour
⅛ teaspoon ground nutmeg, optional
4 cups (960 ml) whole milk
1 cup (240 ml) heavy whipping cream
1 tablespoon (15 ml) Dijon mustard, or yellow mustard, optional
16 ounces (454 g) sharp cheddar cheese, freshly shredded, 4 cups

Instructions
Cook the Pasta – In a large pot, bring water to a boil. Stir in 1 tablespoon of salt until dissolved. Add the pasta and stir to prevent sticking. Cook, stirring occasionally, until al dente, about 7 to 9 minutes. Drain in a colander.
Make the Roux – Melt butter in a large skillet over medium-high heat. Add the flour, 1 teaspoon salt, and nutmeg (if using). Cook, constantly whisking, until fragrant and lightly golden, about 1 to 2 minutes.
Make the Cheese Sauce – Gradually whisk in the milk and cream. Whisk in the mustard (if using). Bring the mixture to a boil, whisking constantly. Reduce the heat to medium and simmer, whisking until thickened, about 5 to 7 minutes. Take the pot off the heat and slowly whisk in cheddar cheese until completely melted.
Add the Pasta – Add pasta to the cheese sauce. Stir to coat evenly. Serve while still hot.

For this price there better be a pot of gold when you get to the bottom of the box

Along with the pot of gold, the limited edition unicorns better really be jumbo too. Its hard on the budget to be a cereal lover in NYC but I make sacrifices in some instances. Not sure this one is worth it though!

Sausage scramble with cheese, toast and home fries. And yes, I finished it all.

Starting the day strong. I’m typically more of a pancake/french toast person when going out for breakfast, but this hit the spot! And oops, I meant hash browns not home fries!
