Too much light, or not enough?

I got her in the beginning of May (second picture), and she’s grown so much. But she’s no longer that deep, oxblood color anymore.

Quite possibly my prettiest loaves to date.

Recipe for one loaf

225g HUNGRY starter (fed around 24 hours prior to using)

375g water

600g flour

12g salt

After mixing ingredients, rest for one hour, then do 4 rounds of stretch/folds every 30 minutes.

After S&Fs, let bulk ferment (time depends on environment. Mine was around 6 hours after mixing)

Pre-shape, let rest for about 15 minutes.

Shape how you want.

Place in banneton and cover, then cold ferment overnight (I had mine in the fridge at around 2:30pm and didn’t take them out until I was ready to bake the next morning around 9am.)

Preheat DO at 450°F/230°C for an hour.

Do a score after 7 minutes in the oven (covered) , replace cover and bake for 20 minutes, then uncovered for 20 minutes.

I should have done some research…

I was not aware of how big hollyhocks get when I planted them with my lilies. They’ve taken over.

Not enough light?

I got these Rexes (Odissi and Spitfire, respectively) a month and a half ago, and they’ve been putting out new leaves like crazy (yay!). But their new leaves don’t have the vibrant pink centers like the old ones. Is it a lighting issue, or do they just need to mature?
