I'm pretty experienced with making salsa at this point, in large part thanks to this sub. But I cannot come close to replicating this salsa from my favorite truck.

It's definitely got some chili arbol in there, and garlic as you can see from the occasional chunk. But it's tangy and salty and spicy and awesome. It's thin and very pourable. I've tried combos of tomatillo, arbol, guajillo, chicken broth, garlic and none come close.

The lighting in the photo makes it look pretty brown. In normal light it looks more of a brown/red. Any ideas?

The only thing I pay for on patreon is this podcast, because patreon in general sucks. The search sucks, the format sucks. I can never remember what I have and haven't seen from the bonus content because patreon doesn't track played videos. Plus, you upload all your stuff to youtube anyway and link it to patreon. I'd much rather just pay you my money directly through a YouTube channel membership.

And hey you might get more subscribers if the videos that only members can watch are right there in people's faces, but inaccessible because they're too cheap to shell out a few clams for the good stuff.

Edit: Nevermind, I just googled it and YouTube takes a much higher commission than Patreon does. But, I guess you could offset that by charging a few bucks more for YouTube memberships than patreon subscriptions so you'd come out even regardless of where people subscribed. It is a way better platform after all.
