I am ordering my first PCB

Basically it's just two PCBS but they're in the same design The preview on The site where I ordered the PCB just chose it as one PCB in the Gerber viewer it shows it as two PCBS (attached a picture) I want my PCB's to look like what they do in the Gerber viewer is that what I'll get

First time making a PCB. How do I tell KiCad that these are two different PCBs that will be connected with wires, and how do I tell it that those are not pin headers?

Why do we use such an old version of Raspberry Pi OS?

Seriously, we keep running into issues. I can’t use it because it no longer has support for anything. I’m sure there’s a reason, but I built it from source on the latest version of Pi OS, and it works fine.
