How long does you spend on your sauce?

Between adding ingredients and simmering, I spend 3+ hours on my sauce. Any less and the family complains that the sauce hasn't come together completely.

Do raccoons eat tomatoe stems?

I got something that entered my yard and ate the stem on a plant. Don't think it's Deer ( they don't entered the small fenced of yard.). I live in an area with lots of wild life. Raccoon or squirrel is my guess, but we also have possum, armadillo and ground hog. It doesn't touch my peppers, just the tomatoes.

So I have this friend that brags about being able to handle hot foods because he uses a Ghost pepper sauce. He doesn't know about my pepper garden. My question is, do I give him a fresh Ghost pod and watch him melt or let someone else down the line do it?

Thoughts on what pepper is more versatile. Super Chilli or Thai Dragons? I'm leaning more towards the Super Chilli because the pepper is larger and fewer seeds. Am I missing something?
