I froze the macaroni but not the cucumber salad, and used Souper cubes to freeze the rice and miso soup. I can never get my onigiri to stick properly together in the shape, maybe my rice is too dry

Freestyled [Japanese chicken soup]!

Fry up some chicken bones and bits with oil, add in potato and daikon. Add in soy sauce, mirin, sake, sugar. Dissolve dashi in rehydrated shiitake stock. Bring to boil then simmer. Crumbled in tofu and cabbage. Healthy and delicious!

Broccoli gomae, carrot ginger dressing salad, white/black rice, freestyled chicken soup

First time free styling soup! Fried up some leftover chicken bones and bits and pieces in a big pot with vegetable oil, white Japanese daikon and potatoes, rehydrated shiitake mushrooms in a big bowl with water, and added two packets of dashi powder. Added seasoning such as soy sauce, Mirin, cooking sugar. Put everything in the pot with the chicken and bring to a boil. Turn down the heat to simmer, then crumble some tofu and cabbage.

First time freestyled soup!

A small personal win – I’ve been practising cooking Japanese food, and tonight for the first time ever, I made a soup freestyle which turned out well! I usually follow recipes religiously, there’s nothing worse than wasting time and money making something gross ☹️ ask me how I know!

I had some leftover chicken bones and bits, so I fried them in vegetable oil in a big pot. Added half a white Japanese daikon and 3 potatos. I added two packets of Dashi powder to 8 rehydrated shiitake mushrooms in water in a big bowl, tossed that in with the chicken. Then just add on top the classic seasonings, such as Mirren, cooking Sake, soy sauce, sugar. I honestly didn't measure bit maybe a spoonful of each sauce, and two teaspoons of sugar. Brought everything to a boil, then turned heat on low to simmer. Crumbled in some leftover tofu and old cabbage.

I realised cooking the same Japanese recipes have helped me get familiar with the basics of seasoning for that particular cuisine type. Now I'm curious about other cuisine styles and their basic ingredients!

i’ve always followed recipes religiously, whenever I try to freestyle something it would turn out horrible. Nothing worse than wasting money and time on making something you couldn’t eat :(

Recently, I’ve been practising a lot of Japanese cooking. I noticed the same basic ingredients would be used, such as dashi, mirin, cooking sake, soy sauce, shiitake mushrooms.

Today I had some leftover chicken bits and pieces, so I dumped them into a pot, added all the usual seasonings, added vegetables leftover, and some rehydrated shiitake mushrooms in their stock.

It turned out great! to really struggle with meal prep, but today was a small personal win.

First time I freestyled a dish and it turned out ok!

A small win- I used to follow recipes religiously because whenever I freestyle anything, it usually turned into a big mess.

Recently, I’ve been practising a lot of Japanese style dishes. I noticed they have many of the same basic ingredients, such as cooking sake, Mirin, sugar, soy sauce, Dashi, shiitake mushrooms etc.

Today I had some leftover chicken bones, so I put them into a big pot and basically added leftover vegetables and a bunch of the seasonings that I usually cook other Japanese dishes with.

I’m really proud of myself! Curious about other people‘s experiences free styling recipes.

Miso glazed eggplant, chicken block curry,Kinpira Gobo, purple rice

I used an air fryer for the first time for the eggplant, 10 min highest heat with some spray on cooking oil, dip in the miso paste mixture (miso, sake, mirin, sugar, another 10 min. Turned out crispy and delicious 😋

Purple rice, Kinpira Gobo, Miso glazed eggplant, Chicken Japanese curry (curry blocks)

Forgot to take a photo before I put some things in the freezer 😅 I’ve been enjoying batch making my ‘Lego blocks’, then assembling them in a nice tray with pretty Japanese tableware. Makes meal times feel special.
