Looking For Lobster Guide

So I'm looking for a boat and a guide for one day. I'm an old guy, competent scuba diver with current card, Navy diver in the 70s. Have my own gear. Going to be in KW the last week in October and I would like to harvest some bugs for the feast and to just be able to say I did it. Can anyone recommend? Money no object, please don't flame me I paid my dues.

Pure Capsaicin

I'm looking to acquire and work with pure capsaicin like the stuff you get from Hotsauce.com. Anyone here have any experience working with that stuff? I'm wanting it for such things as making extremely hot jams and jellies, of which the habs aren't nearly hot enough for me. I'm noticing it's pretty expensive, would you be diluting it, and exactly how hazardous is it? Thanks for feedback.

Curry Mansion Inn

We spent last week in KW and stayed at the Curry Mansion. We have been staying here for some decades and it has def gone down hill since Spotswoods took it over. But I have to say if you play it right it's a hit. First of all since it's got such bad reviews the prices are great. If you don't mind no service or staff you can save money. The rooms are nice and sort of clean. Next, the "breakfast" is croissants and lunch meat so don't eat there; we didn't see a single person eating it. Next, their "happy hour" is virtually nonexistent, the bartender never shows up BUT you can cop their glasses and ice, BYOB, mix your own and drink on their beautiful veranda. They have to be losing money out the a but must be a tax write off and I'm in for it! And oh yeah, it's got plenty of free parking, even if you're not staying there you can park for free while you do your thing on Duval, the only free parking in KW!

Thai Cuisine Mandatory Tip

We always ate at Thai Cuisine when we come down. We were astonished to see an 18% "service charge" added to our bill. WTF? We always tip 20% so they are ripping themselves off. A mandatory tip is not a tip, it's an food upcharge. So we won't go back and going to put it out there on reviews. Greed is always the undoing.

Steamer Ovens

I recently replaced my kitchen oven which had a wonderful lower steamer. My new oven doesn't have one. I like to rest my briskets/pastramis for 12-24 hours at 180 in the steamer after smoking. Is there any countertop steamer oven that could serve this purpose? I hate the thought of using a cooler "cambro" with hot towels, boiling water, etc. Thanks.

[homemade] Cajun Catfish And Fried Okra

Ingredients:

Catfish fillets

Oil, about 1/2 inch deep

Buttermilk

1/2 cup fine grind yellow cornmeal

1/2 cup coarse grind yellow cornmeal

1 teaspoon seasoned salt

1 teaspoon black pepper

½ tsp Accent

Onion powder

Garlic powder

White pepper

thyme, oregano, or bay

Mustard powder

Sliced okra

Instructions:

Pat the fillets dry with a paper towel. Place them in a baking dish and cover them in buttermilk. Allow them to sit for 30 minutes in the refrigerator.

Pour the oil into a SHALLOW skillet and heat it to around 350ºF.

DON'T GO ABOVE 380F OR IT WILL BURN!

Soak the okra in buttermilk, then throw it into a plastic bag with 1 cup Cajun cornmeal mix.

In a large bowl, combine the cornmeal and spices with a whisk. Drain the fillets, SHAKING BUT NOT RINSING. Cover the fillets and okra with the cornmeal, place them in the hot oil. Cook them until crispy, about 2 to 3 minutes.

Remove the fillets from oil and place on a paper towel. Fry the okra until golden, about 2-3 minutes.

Mens Warehouse Or Brooks Brothers

I'm thinking about buying a suit. Never been a fashion snob. However, I can afford either one. I still have an eye for value, though. Is there really a difference?

Who Makes Fish And Chips?

So I have a recipe for UK style fish and chips which I'm very satisfied with. However when I look at videos of chippies in the UK I notice that the batter is almost always a golden yellow color. Does anyone know what ingredient causes this?

BEER BATTER FISH

Ingredients:

North Atlantic cod fillets

Batter:

1 cup all purpose flour

1 cup cup rice flour

2 tbsp baking powder

½ tsp Accent

Extra AP and rice flour 50:50 for dusting the fillets

1 cup ice cold beer, more or less

2 tbsp Everclear

Directions:

Dry the cod fillets and lightly sprinkle with sea salt. Refrigerate for 2 hours. Blot the fillets completely dry and dust with rice flour.

Mix the dry batter ingredients. Add the Everclear and beer until it's like thin pancake batter. Refrigerate for 1 hour. Coat the filets with the batter and drop into hot oil at 375 degrees. Cook until golden brown. Top with some flour for extra tempura. Drain on paper towels. Serve with mushy peas and chips, if desired.

I Cooked Eggs Benedict

Just got back from a vacation in the UK which has wonderful cuisine IMO with a few exceptions. When I travel I always try to replicate some of my favorite dishes I experienced. The inn where we stayed served Eggs Benedict as part of the traditional English breakfast and I wasn't thrilled, surely I can do better I thought. So I made it at home and yuck. Does anyone think this is good food? Oh well, at least I learned how to make proper poached eggs.

EGGS BENEDICT

Make the hollandaise sauce:

140g/10Tbsp butter

3 egg yolks

15g lemon juice (or ½ lemon)

3g or 1 heaping tsp salt

Very small pinch cayenne

15g or 1Tbsp Worcestershire sauce

10g or ¾ Tbsp Dijon mustard

25g or 1 3/4 Tbsp water

Add egg yolks, lemon juice, salt, cayenne, worch, and dijon to a blender and spin until combined. Add butter to a small sauce pan over low heat to melt. Temp should be at 175F/80C. TO KEEP THE BUTTER WARM WHILE POURING, BOIL WATER IN A MEASURING CUP, POUR IT OUT, AND PLACE THE MELTED BUTTER IN THE HOT CUP. Slowly stream in 175F butter over the course of 45-60 seconds. Sauce will turn very thick so add the 25g water and spin again for about 45 more seconds. Depending on your blender, the temp of the sauce should be at about 130. Cover and hold over the lowest heat until ready to serve.

Poach 2 eggs

Build the eggs Benedict:

Canadian bacon or smoked ham

English muffin, halved

Butter

Hollandaise, warmed

Chives, minced

Heat round pieces of ham or Canadian bacon in a skillet over high until lightly crisped and browned on each side (about 45-60 sec per side)

Split English muffin and toast. Spread with butter on each piece. Top with 4 crisped pieces of ham/Canadian bacon. Top each side with 1 poached egg and generous spoonful of hollandaise. Garnish with minced chives.

How To Eat Gumbo?

So I'm hell bent on concocting authentic seafood gumbo (as can get; I'm Greek, not Cajun) so I recently acquired 10 lbs of blue crabs from Louisiana along with some andouille. My question is, how do you eat that stuff? It looks like they just chuck the crabs into the pot shell and all. How do they get the meat out of the shells when it comes time to eat? Helllp!

Hollywood Brown Derby

We spend many of our retirement days at WDW, mainly for the food. I'm fixated on the Hollywood Brown Derby and in particular, I'm addicted to their Cobb salad. I'm not necessarily a salad guy, but I can't get enough of this one. Every trip, this is our first stop, and I always get the same thing; I honestly can't remember ever ordering anything else. What is it about this salad that I can't resist, is it the MSG? And the bread, OMG! The ambience and decor of this place is incredible too. The bar, the outside bar. Gotta go back . . .

Gear Rinse

My gear is top of line Scuba Pro. Diving is in salt water in SW Florida. I have a 10,000 gal. chlorinated in ground pool in my back yard. My question is, can I just clean my gear in the pool? I hate doing it in the bath tub!

So it looks like Compass Realty only has Truman Annex rentals with a 28 day minimum stay. I'm assuming because of some law passed by the city. This equates to a $24,000 minimum fee for a three bedroom property. Is this city wide? How can anyone afford to come to Key West?

What Rube Goldberg came up with locking lug nuts? So I lost the key to my nuts. I went on Amazon and paid $20 for a locking lug nut cutter and was able to get three of them off. The fourth one was over tightened and wouldn't give, even with a 5 foot come-along. Had to take it to the dealer (no tire shop would touch it) and they drilled it out at the cost of $1000. My question is, if I'm a full time tire thief, what's to keep me from buying a locking nut cutter from Amazon to help me in my work? Worthless.
