[OC] Home made baking powder

So, I know that home made baking powder is 2 parts cream of tartar and 1 part baking soda. Cornstarch is optional to prevent breakdown. I've been making this for 4 months and it works but could I use less?

What I'm curious about is that without the cornstarch, wouldn't the baking powder be substantially more potent? The ingredients on commercial brands start with cornstarch indicating that to be the primary ingredient.

Am I on the right track by choosing gluten free?

I quit processed wheat flour as part of my diet "clean up" which included almost no processed meats (sausage, bacon, ham, etc.) or artificial sweeteners.

What I've found is that I've replaced wheat flour with myriad, potentially suspect ingredients and hours of my life trying to replicate the bread I used to buy for $5. I try to buy organic when it's not unreasonably priced but I still don't know what processes or chemicals are used to obtain the flour/powder/ingredient.

Would I be better off just milling my own organic or heirloom wheat into bread flour?

Why isn't 25w actually 25w?

I bought some new Mag Safe style chargers claiming to be 25 watts.

To be fair, they do charge my phone faster than any other wireless charging device I have.

A battery monitoring app shows that under full demand, I typically get 600ma which, if I calculate correctly, is around 3 watts.

Is this right/normal/typical?

To be clear, I am NOT comparing this to plug-in charging.

How does the v3 control shutter speed?

The v3 I have monitoring my pellet smoker sometimes shows the LED display fine and sometimes it is flickering as if the refresh rate of the display and the shutter speed of the cam are different.

It must be variable so how would I control it or "fool it" into behaving in a way that makes the display legible?

Does the v3 offer a way to control shutter speed?

I use one of my cams to monitor my pellet smoker display. It is a segmented LED and sometimes the display is clear and steady and sometimes the display is stroboscopic with the digits flashing on and off in a slow pattern.

When strobing it is very difficult to determine what the display is actually reading.

Last night while smoking some sausage, the display was solid as a rock in the cam. Today, smoking some pork loin, the display is hardly legible.

Finally have a recipe that I love, is easy but just one flaw.

TL;DR: cream cheese, eggs, egg white powder, GF flour and leavening fall after baking.

I started with a recipe from a carnivore YouTuber and then modified it to my taste. It's really good.

It started with eggs, cream cheese, butter, egg white powder and leavening. I now eliminated the butter (too greasy), halved the egg white powder and added the same amount back in Alton Brown's all purpose GF flour mix that I blend with clean ingredients.

I started by making waffles which is great but a little messy and time consuming. I then tried a loaf pan and it was fine. I like pullman-sized (is that a thing?) bread slices so I increased the recipe by 50% and it works but falls by about 50% during cooling. Still tasty and light enough but short wide slices aren't my goal.

Is there a physical limit to GF baking? I really miss my Orowheat-style wide slices.

How do I stop the fall? So far all I've tried is letting the loaf slow cool in the oven.

The bread is slightly over the top of the pan at the and of 80 minutes baking at 325F.

4K Pro V1 remote mic problem

The mic works for regular searches and controls: press and hold the mic button and the display indicates listening, the remote indicator light remains lit and the green mic icon in the upper right corner is displayed.

But when the OSKB is active and the button is pressed and held, the remote mic will key up for less than one second and stop. The indicator light on the remote also turns on for about 1 second and then off. The green mic icon displays for a few seconds and then disappears. In the OSKB I see the four dots start to wave and then quickly go away.

This is not a remote problem, per se. I have done the battery thing, the pairing thing, the remove and re-pair thing.

I'm at the end of my troubleshooting/search wits and I'm trying Reddit for one last effort before doing a factory reset of my box.

This feature worked since December 2025 and quit about 3 weeks ago.

E85

First, let me worry about storage, corrosion, handling, whatever.

EDIT: I don't care about the typical recommendations, the residues, the corrosion, the loss of energy. I know what E85 is and I want to use it and that's all that's important here.

What is really need is a primer on what modifications to do to a 5KW standby generator to make it run reliably on E85.

I know why mfrs say not to use it, I know what the downsides are for E85 vs gasoline as a fuel but this is my chicken so let me fk it.

I'm a GC with an original trade as an electrician. I've been doing this stuff for a long time but I recently came across some #8 that was very difficult to strip.

I bought 500 ft rolls of black, orange and yellow. The yellow was pretty normal and fairly easy to strip. The black and the orange were extremely difficult. All three cables came from CME. The black and the orange were only that color on the outside and had what appeared to be another layer inside that was white and was almost molded into the strands.

Is this the way cable is going to be from now on? Are there tips and tricks to make this easier to strip? I had to make 45 connections on this job and now my hands are virtually ruined for the next day or so.
